Jean Bouton era descendent al unei familii de mesteri ai bauturilor franceze si furnizor oficial la Curtea lui Napoleon. Odata cu prabusirea Imperiului Napoleonic, a decis sa deschida o distilerie in Bologna, vechiul oras italian, unde a gasit un teritoriu asemanator regiunii Charente, tara Cognacului.
