About this deal

The Crossbill story started in 2012 on a small estate on the outskirts of Aviemore in the Scottish Highlands. A chance meeting at the local pub between two adventurous spirits began a journey for the brand and an idea that an excellent tasting Scottish Gin didn’t have to be complicated. A skilled distiller could tease out various flavours with just two locally foraged botanicals. Crossbill Gin was born and continued to grow before eventually relocating in 2017 to its current home in Glasgow’s famous Barras. The new distillery space, affectionately known as The Hatchery, provided a brand home for Crossbill Gin and additional space for a shop and a gin school where visitors can distil a unique Crossbill Gin. Crossbill Gin is of this new ilk. Crossbill takes provenance seriously. If you’re going to call yourself Scotland, there better be something from the place in your bottle.

The result is an intense concentrated dry gin that captures an unequalled level of freshness. A tribute to a rare and magnificent native Highland conifer. Plenty of gins, right or wrong can claim to be “Scottish” based on this alone. As if simply placing your building there allows you to claim something of the land. Nice and fresh. The character of the juniper really dominates this gin: fresh and almost a touch exotic.This gin has a lot going for it, and I think the end product justifies all the work and effort that went into sourcing and harvesting the juniper. An ultra-premium gin, distilled from a single specimen juniper bush, bottled at still strength, therefore, holding more of the essential oils from the botanicals, changing the dynamic of the gin. We suggest you serve over ice with a good quality tonic and a flamed orange twist. I went Tom Collins as the second drink with Crossbill. A little more brisk, with the citrus primarily coming from the fresh lemon. Piney again, but crisp and bright. Nice sharpness to it. The vegetal notes seemed mostly muted and only faintly hinted at until the finish where celery comes through bright and warm. The finish is characteristic for a Tom Collins, long and a bit sour.
