Don’t let the frosting of this cake intimidate you. We made this basic 4-ingredient, 10-minute fondant recipe, colored it bright pink, and draped it over the cake. We used a small decorating tip to pipe some buttercream “pearls” on the dress and kept it very simple. You can add ribbon, icing, sprinkles, or any other edible decorations you like! What Frosting is Best? Cover the seam where the bodice and skirt meet… And now time to add the criss crossing of the ribbon onto the bodice. I rolled out the pink really thin, and then using a pizza cutter cut it really narrow. This way I didn’t have to try to roll it evenly into such a small snake! I painted the bodice with clear vanilla (see, you can’t even see it!). Now one strip at a time start cutting and building the criss crossing! Prep your piping bags with the colors and tips you are going to use. I have found that big tips are my friend when it comes for frosting a princess Barbie cake. You can get pretty designs without having to pipe lots of individual stars. The Elsa cake (below) was less time consuming than the Rapunzel cake (also below). Get creative with decorations! You can use sprinkles or any shape or size, piping gels, or any other fun sugary ingredients you can find. Put the bottom layer of your cake on the serving platter or cake stand that you will use. Slip some parchment paper a few inches wide (or waxed paper) under the edges of your cake about ¼ in. You’re going to pull these out after you’ve decorated it and it will give you a clean plate and smooth edges.

Strip your doll while the cake is in the freezer. Wrap the doll in saran wrap – or if you don’t have that, use waxed paper with a rubber band. It doesn’t work nearly as well and gives her a bit of a bumpy waist, but you can work around it. I did. If you are using a Rapunzel doll, you also want to wrap her hair up so it doesn’t get in your way. I secured it on top of her head with another rubber band.For any of the Barbie cakes what we need to start with is start at the inside/bottom and work your way out/up! So the underskirt is where we’re starting. In your big bowl, cream together the butter, sugar and dry strawberry gelatin until light and fluffy chunks. I covered the pretty section with some luster dust and then to bring out the detail I painted the lines with a paint brush and clear vanilla! (notice I rolled up her 16 inch long hair and using a twist tie kept it out of her face, and out of the way while I worked on the dress!) Grease and flour your cake pans. You want to use 3 8-inch round cake pans and one ovenproof glass bowl. Get creative with decorations! You can use sprinkles or any shape or size, piping gels, or any other fun sugary ingredients you can find. You can also use fresh raspberries but make sure they are very dry so they don’t bleed onto your cake.

I think I might have impressed myself with this one. At least at 2 a.m. when I finished up, I thought it might be my best culinary masterpiece to date. I filled my squishy cake decorating tubes with frosting and put the princess dress that was my pattern, next to me on the counter. I started with the inside fold of her skirt and used a spatula with the lighter frosting to create the triangle. I covered the rest of the cake with the darker color. I used this cake pan 2 times already. Both were with Barbie dolls. The cake was chocolate. I never use box mixes since I do not like the taste. I found that I had to bake my usual recipe15 min longer than usual. I used Magnolia Bakery’s Chocolate Birthday Cake recipe. (it is enough for a 9″ three layer cake and fills the wonder mold pan perfectly.) Since it is such a moist cake it didn”t dry out as much when I baked it longer. Put a crumb coat of frosting on the cake. I never knew what this meant until now. It means to make a thin layer to cover the cake. You can make it smooth by taking a piece of paper and curve it slightly, from the bottom to the top use the edge to create a smooth surface. Be sure to spread frosting around the hole at the top. Cut a small hole in the center of each. You are going to drop your doll into this hole. Make it as small as possible. I couldn’t find a cookie cutter the right size, so I actually make my circle cut pattern with a soft-boiled egg holder lid that my mother-in-law gave us. (First time I found legitimate use for it.)Freeze and frost.I usually like to wrap the whole cake in plastic wrap and pop it in the freezer overnight after it has cooled. This makes it so much easier to frost later on. Insert doll into the top of the cake (you may want to use a knife to cut a hole the width of the Barbie doll if it is still fairly frozen) and decorate I love using our homemade buttercream frosting or fondant when I am decorating cakes with beautiful detail like these princess cakes. Fondant is great to get the smooth, flowy look. Buttercream frosting holds its shape well and it is easy to pipe so you can do all kinds of fun designs for your Disney princess cake. You will want about 6-7 cups of frosting to cover your cake if you are wanting to pipe the entire cake. This allows for some extra for dividing and color mixing. For the Elsa Barbie doll birthday cake we used a Barbie that had a painted on body and a skirt (instead of a full dress). This made it super easy to decorate. We mixed Sky Blue and Lavender food coloring to get the right colors. We kept adding color a drop at a time until it matched Elsa’s bodice colors. Frost the top layer of your cake. Place a layer on top. Frost it. Place a layer on top. Frost it. Place the cake made in the bowl on top of it so the dome side is up. Today I am trying to make a Belle cake BUT my sons friend wants a vanilla cake. I use the Traditional Vanilla Bithday cake recipe from the same book but the cake fell. The middle simply did not bake evenly ;( BONUS DIY PROJECT – Make Gerbera Daisy Flower Hair clips (I got some alligator clips and hot glued them on and gave them to all the girls at the party, and used the others on the Rapunzel braid we made) When using a fruit filling such as this blueberry jam, it’s important to keep it contained by piping a circle of frosting around the cake, before adding the jam, then top with a thin layer of whipped topping. Too much, and this will leak out the sides of the cake! Less is more!

I made 2 batches of my cream cheese buttercream in a beautiful shade of light purple to frost the whole cake. Then another batch a bright yellow for the braid. I flavored each batch with lemon extract. See prior post.

After the cake is good and chilled, start covering the whole mountain with frosting. I chose to do the paper drag again to give me a smooth surface. Update: Here’s a photo of the cake Lori — one of my awesome readers — made for her girls! LOVE it!!! Whip the mascarpone whipped topping next. Into a stand mixer using a whisk attachment, I combined 1 1/2 c cold, heavy cream, 3/4 c powdered sugar, 1 tsp lemon extract, and whipped til stiff. Then I added by spoonfuls, with mixer on med – 8 oz mascarpone cream cheese. Whip til well-blended, but don’t over-whip. Chill. Shear the tops of your cakes so that they have an even surface. A serrated knife works best, and if you freeze them for about 45 minutes, that will help keep crumbs to a minimum. DON’T freeze these overnight, and DON’T wrap them in waxed paper and freeze together until they are completely cooled. Even if they feel like they are, don’t believe it. As you might guess, I did both of the above and spent a considerable amount of time (and cut myself repeatedly in the process) of trying to separate the frozen cakes. For this cake, I also divided my frosting into a large bowl and small bowl. The small bowl with lighter purple was for her sleeves, some of the bodice and the inside of her skirt. I used Duff’s (love Duff!) Color Gels.Instead of waiting until that evening to reveal the cake to the Princess, I showed it to her when she woke up the morning of her actual birthday. I figured she could appreciate it longer that way. And that was a well-played move, Mom. Now using a sharp knife trim the bodice into shape! Remember you can do any princess you want, so use the colors and bodice shape of the princess your trying to make. Drop your doll into the middle of the cake. Use frosting to fill in the gaps. Or, if you’re like me and have a large gap on both sides to fill, use the cut cake that you had trimmed from the 9” round cakes that you made instead of the 8” because that’s what size cake pans you have. I filled in the holes with that and then frosted over it. You could probably fill it in with anything edible… bread maybe? … if you actually made the right size cakes to begin with and didn’t have any leftovers. I had to overcome a few structural issues in constructing this cake. First of all, I had to secure a long wooden skewer to the doll, under her dress. This would be inserted deep into the cake (about 3″), so I wouldn’t have to worry about the doll tipping over! I secured it with 2 zip ties, TIGHTLY under the dress. I let the cake sit over night to let the frosting harden so the long hair from the doll wouldn’t get glued in. In the morning I let Rapunzel’s hair down, added the extension and draped it around the cake.
