About this deal

The flavor is unique (more on that below!) and yuzu shows up in a variety of culinary uses. But beyond that, it’s also sought after for its aromatic properties. There’s evena Japanese tradition of bathing with yuzu fruit during the winter solstice ( yuzuyu). A yuzu bath isbelieved to soothe dry skin and guard against seasonal colds. Larger than a mandarin orange but smaller than a grapefruit, yuzu's uneven skin is typically yellow or green, depending on its ripeness. Inside, yuzu flesh is similar to a lemon's and is very aromatic. Rarely eaten as a whole fruit, yuzu is mostly used for its zest and juice. Heat the vegetable oil to 160°C, fry the uncooked wild rice until it puffs up and the colour changes to light brown. Carefully remove the wild rice from the oil and drain on kitchen paper. Season with salt and pepper. Other chefs call on yuzu to play a more central role in their dishes by pairing it with various proteins. "Typically I like to pair it with a fatty dish, like pork belly or wagyu," offers Kim, "but it also complements fresh seafood—especially sashimi and sushi—brilliantly, by adding a touch of fresh citrus tang and aroma on your nose." Add Vigor to Veggies There are a variety of ways to harness this unique flavor in yuzu recipes! Try these ideas to get started:

Yuzu is a type of small yellow citrus fruit native to East Asia. It was originally cultivated in China before spreading to Korea and Japan. Yuzu has been used in these cultures for thousands of years, and by the late 1800s, it finally appeared in the United States. It looks like a small grapefruit or tangerine, with a bumpy, rough outer skin. The color ranges from green to yellow, looking similar to a lemon, with green yuzu being less ripe.

Take three of the avocados, remove the stones in the middle, and separate the avocado from its skin using a large spoon. Place the flesh in food processor and blend it into a purée with the yuzu juice and the juice of one lime. Season with salt. Now that you’re up-to-date on yuzu nutrition and some of the emerging science, let’s get into the culinary uses! Where to Buy Yuzu Fruit and Yuzu Juice Brew the most flavourful beers with our fruit purees. The use of fruit in beer was previously limited to a few specific styles like Belgian lambic. In recent years, however, it has become increasingly popular as a result of innovative thinking among the ever-growing community of homebrewers and craft brewers. Other yuzu purees seem more suited for foodservice or restaurants, either available in bulk quantities only or need to be kept frozen. For side dishes and vegetables, pair it with carrots, salad greens or lettuce, mushrooms, and onions. If used in a sauce or dressing, it can also work well with green beans, broccoli, or Brussels sprouts.

Method: Pour the blueberry puree in the glass and fill with crushed ice. In a shaker, combine cocoa butter-washed tequila, Velvet Falernum, lime juice, and three dashes of yuzu juice and shake. Strain over crushed ice and garnish with micro shiso if available. Street Smart Nutrition Tip: Avoid yuzu fruit and yuzu products if you have an allergy to citric acid. Other potential risks could be damage to tooth enamel or heartburn due to how acidic it is. However, yuzu is perfectly safe to enjoy for the majority of people and poses little risk. Although it can be a more expensive and hard-to-find option, cooking with yuzu can be a fun way to experiment in the kitchen. If you like exploring different cuisines or putting your own twist on recipes, you’ll likely have a great time adding yuzu flavor to some of your favorites!

As soon as I can get a hold of some fresh yuzu fruit, this is one of the first things I’ll try making! Health Benefits and Yuzu Nutrition The only real downside with yuzu is that it can be quite difficult to buy the fresh fruit in the United States. That’s because we actually have a ban on the import of citrus fruit and citrus trees. This helps contain disease and invasive species, which is a very good thing! But unfortunately it makes it almost impossible to find yuzu fruit in most regions. Yuzu is grown in California and growers can ship it, but it can get expensive. Kreuther has a similar approach to substituting yuzu, adding: "If you can't find yuzu, I suggest using Meyer lemon juice with a dash of grapefruit (say, 15 percent of the total volume). Buddha's Hand [another Asian citrus fruit] can also be a great one to try in yuzu's place!" Yuzu Recipes Monin has created a toolbox of amazing flavors that help our customers build the inventive drinks they dream up. Our purées don’t require thawing, refrigeration, or muddling, which makes for easy prep and storage. For flavors that are traditionally difficult to extract, like yuzu or banana, our purée line offers bartenders an easy solution to achieving a bold, premium taste full of real fruit and balanced sweetness. Introduced to Japan more than 1,000 years ago, yuzu fruit tastes like a cross between an orange, a grapefruit, and a lemon and is so bitter that it is not eaten alone. It finds many uses in Japanese cuisine, however. It is a traditional accompaniment for wild mushrooms, whose harvest season in late September and early October overlaps with yuzu’s. Yuzu is mainly used in Japan for its uniquely fragrant peel, which is added at the last minute to soups, salads, and simmered dishes and releases its aroma on gentle heating. Sweet white miso flavoured with yuzu is a popular dressing for aemono, while the dipping sauce ponzu is made with the juice of either yuzu or the sour green citrus fruits sudachi ( Citrus sudachi) and kabosu ( Citrus sphaerocarpa). Koreans make a sweet yuzu marmalade that is diluted with hot water to create an aromatic tea laden with vitamin C.Yuzu is a citrus fruit that resembles grapefruit, and has taste similar to lemon and lime. Although it is believed to have originated in China, it's become a very popular cuisine ingredient in Japan. It is rarely eaten as a fruit, and instead used to make ponzu sauce, teas, and vinegar. Yuzu has a sour and tart taste similar to lemon, but is incredibly flagrant and floral, so much that it is sometimes use to make perfumes. Many people compare yuzu to hybrid of mandarin and grapefruit. It is very popular to make gin or sake drinks. Where to find Yuzu Your best bet for purchasing fresh yuzu is from small growers in California, where it's grown in winter. Fortunately, bottled yuzu juice is more widely available online as well as in Asian markets. Yuzu plays such a pivotal role in Japanese cuisine and now, in recent times, it has become an integral ingredient in so many other cuisines and cultures," explains Min Kim, executive chef at Wynn Las Vegas' Mizumi. "It has such a significant value in our culture, not only as a cooking ingredient, but as something that is so fundamental in our daily lives." I also like pairing it with something carbonated like ginger beer, tonic water, or fruit-flavored sparkling water Suze is, plainly, a bitter aperitif (which we are no strangers to here). The main ingredient is gentian root, specifically the species gentiana lutea (Great Yellow Gentian), which imparts the bitter, vegetal flavors the drink is known for. Gentian is also used in a number of other beverages — both alcoholic and non-alcoholic — such as Gentian (obvious, right?) and the soft drink, Moxie. The plant grows in Switzerland and France, which is a great segue into ...

It’s well established that these plant compounds can be powerful antioxidants and have an anti-inflammatory effect. But I don’t know of much research looking into whether this could be used to prevent dementia or Alzheimer’s disease. There are pretty significant limitations, since we can’t rely on animal studies to know exactly how a similar trial would pan out for human subjects. For those who prefer sweet desserts over alcoholic drinks, the frozen fruit paste will also work in many refreshing recipes.
