Ammu: Indian Home Cooking to Nourish Your Soul - Goodreads

Asma's restaurant is rightfully legendary — and I think that makes it hard to evaluate her work critically. Put the roasting tin on the hob and bring the liquid to a slow rolling boil, turning the lamb once or twice, until the liquid is reduced. Turn off the heat. Ammu is a collection of recipes from Asma Khan’s childhood, her Indian family kitchen. It is a celebration of where she comes from, of home cooking, and the inextricable link between food and love. It is also a chance for Asma to honor her ammu—mother—and to share with us the recipes that made her and rooted her to home. I had to make some adjustments (no onions) due to current dietary restrictions, but I thought this was incredibly delicious. There was just the right amount of fenugreek to perfume but not overwhelm the dish. I used ground byadgi chile and whole sannam chiles and I thought the heat level was perfect. Asma Khan writes intimately and personally about her family history and includes many photographs of her life from childhood up to her marriage. She draws in the reader so well that I found myself pouring over the photographs as if they were of a family I already knew. The food images are compelling too, taken by photographer Laura Edwards.
