School visits are always incredibly popular for ice cream vans. Children love them and it’s the perfect treat. Over the last few years, we have served tens of thousands of children and teachers for end-of-year treats, and leavers’ parties. First opened by Luca Scappaticcio in 1908, this cafe has become one of the best-known destinations in Musselburgh (with a shop in Edinburgh’s Morningside, too). There is a good mix of traditional and modern flavours, but their authentic Italian stracciatella is particularly tasty. Whipped cream: Although freshly made whipped cream is truly spectacular in this recipe, you may use store-bought instead. You can replace it with coconut whipped cream for a dairy-free option.

Coulis: A coulis is a simple and delicious sauce made from puréed and strained vegetables or fruits. You can use just about any type of fruit in this recipe but I chose to make a raspberry coulis which I find to be absolutely delicious and a gorgeous crimson color. Raspberry coulis pairs well with so many delicious desserts. You might like to try it with our Flourless Chocolate Cake or our Panna Cotta recipes. Prices quoted are inclusive which means we supply all the ice cream with toppings and sauces or ice lollies for the agreed amount of time or until all your guests have been served. Combine the fruit (I’m showing raspberries), sugar and lemon juice in a small pot to make the sauce. Stir, and allow to simmer for about 5 minutes then remove from heat.
