Cane Sugar Fruits low in pectin on the other hand like ripe strawberries are low in pectin and acid so could do with a boost to help achieve a firm set. Honey is a great substitute for jam sugar and is a healthier option too. Most people find honey to be a great addition to their jam recipe.
