About this deal

This is such an easy recipe which means it’s great for kids who want to give a helping hand. Children can help measure and mix everything together to make the cake batter as well as adding in the rainbow colours. We typically start with eggs so we can weigh them first and then add the same amount of flour, butter and sugar. The five 18cm round pans allow you to bake all of the luscious layers at once, instead of needing to clean and refill a pan in-between bakes, so you can get your oven switched off sooner, and get on with the exciting part – assembling your rainbow cake! Time Taken: Less than 2 hours ( excluding time taken for cake to cool, for applying crumb layer, for applying second layer after crumb layer ). A stunning celebration cake of six or seven colourful layers with soft cheese frosting – this vibrant rainbow cake an impressive showstopper

I’ve listed the ingredients for all the layers as well as for making two layers at a time. What can I use instead of self raising flour?Preheat the oven to 170C/150C Fan/Gas 3. Grease 6 x 20cm/8in loose bottom sandwich cake tins (approximately 4cm/1½in deep) and line the bottoms with greaseproof paper. Dust the tins with flour, then shake out the excess. To make sure the rainbow cake comes out a lovely vibrant colour, you need to use good quality bake safe food colourings. I’ve tried the liquid food colours you find in supermarkets in the past and while they look great as you make the batter, they fade in the oven. Cover the bowl if you can and start on a slow speed so the icing sugar doesn’t fly everywhere. Once the icing sugar has started to mix in, turn the speed up and mix the icing for a least 5 minutes. The longer you leave it the softer and fluffier it will be. Assemble the rainbow layer cake

If you have young children you might need to hold the spoon while they pour in the vanilla or vice versa. Older children should manage this on their own. Listen, I don’t know too many foods that can make you feel all cheery inside than the sight of a beautiful, bright rainbow layered cake! But this buttermilk vanilla cake is so freakin easy there’s really no reason to pull out those box cake mixes. Save them for another day.

I rrrrreally like it with cream cheese frosting though. Makes it taste all complicated and stuff. And since there’s a lot of frosted layers with this cake you might as well make a really good, but not to sweet frosting right? If you don’t have any self raising flour, swap it for an equal amount as plain or all purpose flour and add an extra 1 tsp for every cup. How to make a rainbow layered cake from scratch This vibrant, six-tiered rainbow creation is a guaranteed showstopper. The delicious layers of moist, colourful sponge are sandwiched with a lightly whipped cream cheese icing, making a super impressive celebration cake. See method Do you have a recommended brand for food coloring? The brand I used left a chemical bitter taste. Otherwise a great cake! Separate into six portions by using a 1/4 cup and 1/8 cup measurement ( explained above ), with the base colour having the most batter and the top colour having the least batter.

Notice how by placing the coloured batter at the center of the subsequent one at the bottom, it pushes the bottom batter outwards! Hence creating that beautiful rainbow effect! Preheat your oven to 180C / 160C Fan / 350F and grease 2 x 20cm (8 inch) loose bottomed cake tins with butter and line the base with a circle of greaseproof / baking paper. Mix the cake ingredients together Prepare a 9 inch springform pan, by placing a piece of parchment paper at its base or simply by buttering and flouring the base and the sides. Preheat your oven to 180 degrees C or 350 degrees F. For the calculations, I first allocate 1/4 cup of cake batter each to six bowls. After which, I add 1/4 cups to the first 4 batters to be added, and 1/8 cup each to the top two layer of the batter. You can see where this is going. We will be using a 1/4 cup portion and 1/8 cup portion to slowly ensure that the base colour will have the most batter, and the top colour will have the least batter. Do measure and adjust accordingly for the best effect!

Bake according to the recipe but stop before adding decoration or icing if called for. Allow to cool completely. Wrap well in clingfilm and tin foil (to prevent freezer burn) and freeze for up to 3 months. Add in the three large eggs along with the vanilla essence / extract, and beat until they are incorporated, with no dark yellow streaks of the egg yolk remaining. Put 180g of the butter into a bowl with 180g of caster sugar, 180g flour, 3 eggs, 2 tsp vanilla extract and 20ml milk. Beat, using a hand-held electric mixer, until light and creamy. I made this cake for one of my kid’s birthdays – all they wanted was a colourful rainbow cake decorated with sweets. If, like me, you have limited cake decorating skills this recipe is perfect. The rainbow layers look so impressive it doesn’t need a lot of fancy decoration on top. How to you make a rainbow cake from scratch?

Did I mention that this cake recipe isa one bowl deal? (YESSSS GAWD!!!) It has a light old fashioned vanilla-ish taste but not too intense. To make the buttercream, place the salted butter in the bowl of an electric mixer. Sift the icing sugar on top, bring the mixture together at a low speed, then beat at high speed for a few minutes until the mixture is pale and fluffy. Add the vanilla extract and beat to combine.I’ve given ingredients for a six layer rainbow cake but as we make 2 layers at a time it’s easy to reduce the quantities to make a smaller 4 layer rainbow cake. If you’re making fewer layers you will just need to adjust the colours you use.
