We produce a delicious premium extra virgin oil made from British rapeseed grown and pressed on our farm in Suffolk. hillfarm cold pressed rapeseed oil is a natural choice for anyone looking for a fully traceable, sustainable British oil. Here’s my recipe – I urge you to try it, or if like some of our family you like mince pie alternatives try it with lemon curd or bakewell tarts in the photograph.The rapeseed is ready to harvest in July when the pods are brown and fragile. When the seed is dry enough with a 9% moisture level we begin harvesting, aiming to get as much done as we can before the rain comes. Autumn The oil is released without any heat treatment. The only heat comes from the friction created during the pressing and never exceeds 35ºC. Gradually add water, the amount will vary depending on your flour so add it bit by bit until the mixture comes together to form a dough.

The best quality oils are cold pressed. Cold pressing retains all of the flavour, aroma, and nutritional value of the oil.

Hillfarm oil has a high smoke point, making it suitable for all types of cooking as well as dipping and dressing. Unlike extra virgin olive oil, our oil can be safely heated up to 220°C so won’t burn or lose any nutritional value in a hot oven, deep fryer or frying pan. The seed is cleaned and gently squeezed to draw out the oil; by treating the seed with respect we retain its nutritional composition and flavour. We leave our hedge cutting as late in the winter as we can so the wild birds can forage for berries and nuts through the cold winter months and build their nests undisturbed in the spring. The rapeseed is beginning to grow. The stem elongates, and flower buds (broccoli heads) appear. By the end of April the familiar yellow rapeseed flower is out and we can see the flowering buds just starting to appear on the main stem. There is no oil as versatile as extra virgin cold pressed rapeseed oil.
