Phylloxera decimates vineyards across Europe and especially France – Absinthe becomes the perfect replacement for wine, accelerating Absinthe’s popularity. The solution, I felt, was simple: I would export only beer with a maximum shelf-life of six months, which would retain its body and integrity. The bans varied in nature with some prohibiting the sale of absinthe, as we discovered in the case of France and her colonies; and others suppressing the use of the active ingredient, Thujone, which was the subject of the ban in the USA.

Rowley left disappointed, but continued to petition Delahaye, asking whether she’d work with him to create the real stuff – in a French distillery (the ban prevented consumption not manufacture). There is one last stage before we are ready to bottle La Fée: A sample is couriered to Marie-Claude Delahaye (in Paris) and also to George Rowley, who test each batch, using their extensive experience of tasting Absinthe and also their knowledge of the original master recipe. Since 2007, Cherry Rocher has distilled La Fée Absinthe Parisienne, and since 2011 La Fée Absinthe Blanche for the La Fée brand. Then taste and aroma of the botanicals that are released by the drop in abv through dilution to drinking strength (12% to 16%abv).

Finally, demineralised water is added to bring the liquid down to 68% ABV, absinthe’s traditional strength. It was widely propagated that absinthe’s principal ingredient, wormwood, had hallucinogenic properties, which made you do irrational, impulsive things.

NV Absinthe Verte by La Fée is a modern, lower abv (38%) French absinthe, aimed at the bar, club and all round party scene. La Fée Absinthe Blanche can be drunk in the traditional manner of adding 2-4 parts iced water, to one part absinthe (less dilution is required due to the lower alcoholic strength, and sugar is not usually required for Blanche Absinthe, but some prefer it with). Two main reasons enabled Absinthe to catapult from an original cure-all starting late 18th century to the Café boulevards of Paris and Bars of New Orleans following the French colonies, Firstly the French sometimes issued it as a ration to troops in theatre of war and Empire building that were prone to malaria (Their then arch rivals on the world stage being the British controlled access to Quinine, used to ward off malaria Gin and Tonic and such!La Fée Absinth Bohemian is a modern absinth that has a vibrant bright green colour and an electric blue rim. As I found in early 1998, a few works of reference exist on the subject of absinthe, although some are now out of print and hard to find.
