Anyway, when I posted about this on Instagram the lovely people from Pocketful of Stones took the time and responded the very next day as follows: The pour is a detail that we are aware of and trying to sort. Vanilla was added to compliment the sea buckthorn, which provides a tart and very refreshing finish.

Gin was apparently invented by monks in Salermo, Southern Italy in the 12th Century and began life as a medicinal liquor (yeah right, just medicinal, we’ve all said that 😉 ). This unique addition is served from a copper flask engraved with the scenery, wildlife, folklore, and history that surrounds them. The Pocketful of Stones Distillery in Penzance has crafted a truly unique gin that incorporates a surprising ingredient: real squid ink!In their own words: [w]e strive to produce everything with the utmost integrity to our craft and respect for the ingredients and the environments that influence our recipes. Once upon a time Hendrick’s with its hint of cucumber or your Bombay Sapphire was as exotic as it got. It then arrived in England in the early 17 th Century after the introduction of jenever , a Dutch and Belgian juniper liquor which was also originally touted as a medicine. Shaun used his experience of working in hospitality in Durban, Belfast, and London to open his own pub in Fitzrovia. With meticulous attention to detail, they handcraft their spirits in small batches, ensuring the utmost care is given to each stage of the production process.

Working at the heart of the ever-changing industry across three decades, Paul has been at the forefront of it all, but being like Uncle Albert, he never talks about it. This time he’d swapped his condiments for botanicals and his wooden spoon for a hydrometer in his role as our master distiller!

Gin derives its predominant flavour from juniper berries but there are so many varieties now, which whilst often retaining the juniper as the base ingredient there are now fine distillations of many other botanicals, herbs and spices, florals and fruits.
