Bought 2nd June 2011 from Selfridge's, Birmingham, England, for a trip to Stonehenge; I wanted something to introduce some friends to 100% agave tequila, and it looks like I really hit paydirt.The liquid is nice and crystal clear, like the water from a fresh mountain spring. As for the aroma coming off the glass, it’s spot on for a typical tequila — herbal notes close to fresh cut grass with a bit of lemon citrus to brighten the whole thing up. Pretty boring bottle. Nothing of note here, although the fact that it's a tall bottle means it's easier to find in our crowded liquor cabinet :P El Jimador Añejo spends an entire year ageing in American oak barrels, lending it an unrivalled soft and sweet taste, plus a rich dark amber colour. This tequila is rich, full-bodied, and can make any occasion special. On The Nose Given the poor showing with the ice, I thought for sure that there would be nothing redeeming in the margarita. But I was wrong, there actually is something interesting here.

There's some wood there, and - interestingly - the agave and fruitiness from the initial return for a second finish a few seconds later! What truly sets this blanco tequila apart from rival brands is its smoothness. Despite not being aged, El Jimador Blanco is as smooth and easy to drink as another distiller’s reposado variant and mixes well. On The Nose A very slight - but not unpleasant - bitterness/sourness comes through, less so when warmed up somewhat; this is coupled with a slightly diminished continuation of the initial taste, albeit without the fruit. There is a hint of wood in there, with some obvious cooked agave - you can taste the 'cookedness' (struggling to put this into words) of it. There's some mild spice in there too, although I don't find the cinnamon that others have. I do get the butterscotchiness though; it's a very smooth feel.Aurelio López and the business remained in the family for over 125 years. Today it is owned by US beverage maker Brown-Forman, but the tequila is still made in the same place and facilities under a Mexican subsidiary. Tequila products sold under the Herradura name are 100% agave. The company makes other tequila products, such as El Jimador, which is the best-selling tequila in Mexico, as well as New Mix, a tequila and grapefruit soda beverage. Since its acquisition by Brown-Forman, Herradura has had many promotional efforts in Mexico and the United States, including inviting artists to use tequila barrels as the bases for art pieces, which are then displayed and auctioned off for charity. The old distillery was shut down in the 1960’s and replaced with a newer modern facility, but the old buildings were maintained as a museum. In the 1970’s, the company introduced their first aged expressions, expanding beyond blanco tequila for the first time. Look out for faint spice and peppery notes in between the swirl of agave flavours. This finish is smooth, soft, and dangerously inviting. Best Served A jimador is a type of farmer who harvests agave plants, which are harvested primarily for the production of mezcal, sotol and tequila. This task requires the skill of identifying ripe agave, which ripens in between 5 and 35 years, depending on the agave species. Unripe agave can have a bitter or overly sweet taste, ruining the distilled spirits made from them. The primary tool of a jimador is the coa de jima or simply coa. This is a flat-bladed knife at the end of a long pole that resembles a hoe. The coa is used to first remove the flower from the agave, which causes the central pineapple (or piña) to swell. Later, the piña is harvested, using the same tool to cut off all of the external leaves of the plant, leaving only the pulpy center which is then chopped and cooked in preparation for the mezcal or tequila production.
