Giorgio’s family has been making vinegar for 130 years and the tradition is passed down to each generation—Giorgio is now working with his son-in-law to keep it alive. Here, music and events are held throughout the summer (The programme is called Kilowatt Summer), as well as modern art projects focused on regeneration and sustainability.Next to Piazza Maggiore is the 16th-century Neptune Fountain built by Flemish sculptor Giambologna. It is so beautiful that many cities across Europe copied it. You don’t need a list of the best restaurants in Bologna—you really can go almost anywhere and get a fantastic meal. While tipping is not expected and most restaurants have a service charge, staff will be pleased if you decide to tip (around 10 per cent) for particularly good service. Evening meals are not usually served before about 8pm though some restaurants in the centre now offer all-day dining.
