This orange pasta is a delicious change-up from the typical pasta dishes you’re used to seeing at the dinner table. It also happens to be very easy to make and a great choice for a mid-week meal with a nice salad. Garlic: I've found 3 cloves of garlic, finely minced, is the optimal amount of garlic for this sauce. Too much, and the garlic flavor becomes overpowering. We're aiming for a fresh, slightly delicate sauce. Having said that, some folks love their garlic - so, if that's you, go crazy! This dish is flexible. Vegan Parmesan Cheese: There's quite a few great vegan parmesan cheese alternatives out there. My personal favorite is Violife's Prosociano Wedge. Be sure to grate it on the fine side of your grater so that it blends in well with the sauce. Pasta: I used spaghetti, but really any kind of pasta will do. If you need your lemon garlic pasta to be gluten free, simply swap in your favorite gluten free pasta. There is no gluten in the sauce.

Because of the nature and texture of ricotta cheese, your pasta sauce will not become completely smooth. This is normal! While not smooth, the sauce is still creamy and delicious. Recipe TipsUnwaxed Lemon: Most lemons sold at the grocery store will have a waxy coating on them. This keeps them fresh for longer, but isn’t tasty if you’re zesting the lemon rind! Be sure to scrub your lemons under hot running water to remove any wax before grating the zest with a microplane . Add the zest and juice of one lemon and stir to combine in the garlic butter.
