Wilton's set of 8 Concentrated Icing and Food Colours make it effortless to get bright, vibrant icing to finish your cake. Just add a drop of one of the 8 included colours to your icing and give it a mix. In no time at all, your icing will be perfect for adding colour to your bake. This is a pure white icing that dries to a smooth, hard, matte finish and it is the most traditional of all icings. Classically it is made with egg whites and icing sugar however we would always recommend using Meri-White because by using this pasteurised egg white you eliminate any potential health risks associated with using fresh egg white and you also achieve more consistent results. If you prefer you can buy a powder mix or ready-made royal icing in tubs. Wilton Icing food colours are the perfect way to add a burst of colour to every bake! The highly concentrated food colouring paste is designed to add colour to your icing, sugarcraft, biscuits, and cake mixes without diluting it ensuring you still get the finish and consistency you need.

Colors deepen in buttercream icings after setting or exposure to light. Color your icing 1-2 hours before decorating. Colors might fade slightly in royal, boiled or Color Flow icing after they have set. Lemon juice or cream of tartar can cause colors to change, for example, violet will become blue. If the recipe has one of these ingredients in it, omit it. In addition, water can cause color changes depending upon your geographical area. If buttercream icing is made with water, replace some of the water with milk or milk powder. Brown color occasionally has a green overtone to it. This usually occurs with the presence of acid in the icing, such as lemon juice or cream of tartar. Omit the acid if tinting icing brown. Dissolving brown color in 1/4 teaspoon water before adding to icing will eliminate the green tone. Marble Effects As you just need a drop to mix into your icing, a little goes a long way with these icing colours. To achieve a two-tone effect, add a different color on the side of the bag before you put in your tinted icing. Staining To make brown, mix red and green gel or paste color or melt unsweetened chocolate or use cocoa powder and mix it into your white icing.
