About this deal

As we mentioned earlier, you need the right heat, airflow, and moisture balance to make a success of biltong making. The ideal climate is warm (not hot), dry, with steady airflow. I place my box in the basement where it is 15 deg C (60 deg F). It is slightly cooler than room temp, and that is good. Once your drill is aligned correctly, you can start drilling but make sure you put the hole saw level with the panel, and don’t drill too fast to ensure the panel doesn’t get too hot from the friction caused by the drilling.If you have the option, consider practicing in your car more often. Most people love letting their voices free in their cars and singing to the top of their lungs, even if they don't have the voice for it. This is an option for those who have a large budget for this sort of thing. Remember how I mentioned that getting a soundproof room or practice space will cost you thousands of dollars? So you may need to tweak your biltong box setup carefully over time until you have a perfect balance. Biltong should dry to ‘semi-moist’ within 24-48 hours, and should not take longer than a week even if you like it crisp.

Heat vs airflow– which matters most in your biltong box? it’s a question we’re often asked. Airflow will always be the most important thing to consider in your biltong dehydrator- but the answer can get a little complex. Let’s take a look at some of the factors you need to consider. Making biltong the right way We have mounted the smaller hole saw of 3.8 cm or 1.5 inches to our drill, and we aligned it on the measured points, make sure not to drill through, as we’ll turn the panel and continue drilling from the other side. That’s why some varieties of biltong dehydrators have light bulbs so that the air is slightly warmed around the meat. However, this needs to be very carefully balanced. If the air is too hot, whether, by bulb heating or simply your climate, it will both ruin the biltong through cooking the outer layer and promote bacterial growth. Now it’s time to measure our wooden dowels; we need four dowels 34 cm or 13.38 inches long. We bought one long dowel with a diameter of 9mm or 0.35 inches. Let’s measure our first dowel and mark 34 cm or 13.38 inches on the dowel. On the indicated spot, we will see our first dowel to size.
