It also successfully transformed into part of the lasagne and made the cooking time much shorter for the second evening. Our mission is to get more plants onto more plates through best-in-class recipes and delicious products. I find many cookbooks have insanely long ingredient lists packed with obscure and expensive items, so I often stick to my old favourites or Google specific ideas.

on a Budget filled me with new cooking confidence and renewed my hunger for discovering delicious recipes. So far, my picks have been the quick recipes which didn’t feel too much of a stretch such as Jane’s Spanish stew, which is a delicious easy one-pot dish.

You can find the recipes for Creamy Carbonara, Crispy Chilli Tofu, Curry Crusted Sweet Potatoes and our Jackfruit Tacos. They do give some good cost saving tips such as eating seasonal produce and using up what produce is on hand, which is also one good way to avoid food waste, and of course things such as cooking from scratch and batch cooking.

On the one hand, I can appreciate that cooking seasonally has it’s benefits, some to do with cost, but plant-based yogurt or butter, a surprising amount of frozen puff pastry, fresh herbs, and a lot of spices, including make-your-own curry pastes, that’s not necessarily budget friendly unless you’re really committed to using up all of the berbere spice blend or pepitas. The lengthy paragraphs are probably intended as detailed instructions, but end up just overwhelming a nervous home cook. I had this book out from the library for a long, long time, but I didn’t spend any more time reading it than I usually do with cookbooks and I didn’t make anything from it. I tried the fresh pasta recipe, it was brilliant, really easy to make with clear instructions, I tentatively tried this again to use for ravioli and it was amazing, no leaking of the fillings and perfect al dente pasta, the best fresh pasta I have eaten. Number one Sunday Times bestselling authors Henry and Ian know how to make outrageously tasty, super satisfying food without breaking the bank.

Two small downsides for me, the cover is awful and downgrades the appearance of the quality of recipes the book contains, there are some beautiful photographs of great food inside, I've no idea why they've pictured a burger and the colour scheme of yellow and cerise is garish.
