Thankfully, there are perks to being a spirits writer, when it comes to setting up tastings. In the last few years, I’ve been consistently expanding my knowledge and tasting data of classic Scottish malt distilleries, falling in love along the way with the likes of GlenDronach, Oban, Arran and Glenfarclas. There was one prominent Highland name on my list, however, that I’d never sampled: The Dalmore. Figuring it was time to finally familiarize myself with this particular, sherry-rich lineup, I reached out to the distillery and ultimately ended up with samples of all 7 core Dalmore expressions.

On the palate, it is harsh and peppery. Any wood or smoke disappears almost immediately, and if there is toffee; it is well burn. All I can say on this one is “woah.” An NAS release intended to appeal to cigar aficionados as a perfect dram for pairing, this is undoubtedly the curveball of The Dalmore lineup, although its process isn’t really all that different. This release is initially matured in bourbon casks, like the others, before spending time in Matusalem oloroso sherry, but then finishing in Cru Cabernet Sauvignon wine barriques. It’s bottled at a somewhat more substantial 44% ABV (88 proof). This annual limited edition begins its maturation journey in American white oak ex-Bourbon barrels, giving a base of soft vanilla and honey. Further enhancement follows, with a longer finishing in hand-selected 30 year old Matusalem Oloroso Sherry casks from the González Byass bodega in Spain, exclusive to The Dalmore.

Single malt from Dalmore and its tremendous Constellation Collection. This one was given a lengthy maturation in a first-fill bourbon cask – 35 years of rest, allowing plenty of time for its flavour profile to develop into something stunning. Under Spanish law a maximum of 30% of each barrel can be moved at one time, meaning some wine will age in the same scale for many, many cycles before finally moving on to the next scale. Over 90% of sherry is made from the grape variety palomino, but sherry can also be made from moscatel or Pedro Ximénez grapes. All sherry is fortified with neutral grape spirit after fermentation and will always be at least three years old.

A rare bottle of 12 year old single malt Scotch whisky from the Dalmore distillery, produced in the 1980s. You'll notice that the bottle shape is rather different to the distillery's current 'dumpy' bottles, though it still bears the sign of the trusty stag.
