About this deal

The all steel build gives this lid a reassuring heft. More comforting though, is the lids non-reactive nature when exposed to salt and acid from your ferment. The advantage to using a tightly-sealed lid is that exposure to oxygen is reduced, so the chance of mold or kahm yeast forming on the surface is reduced. If you don’t know that your weight will inevitably break down and you’ll end up eating it with your ferments. The rubber gasket in the lid, held in position by the clip, will shape itself around the rim, seal the jar and allow virtually zero oxygen to go in. There’s no messing around with muslin cloths or remembering to 'burp' your jar as the airtight lid features a special one-way valve that allows built-up gas from the fermenting process to escape automatically, so there’ll be no explosive situations, while also preventing contamination from outside, which can make your food go mouldy.

Fermentation Lid With Air Lock - Kilner® Jar

If you have had the experience, you already know how frustrating it is to lose your beloved vegetables you were so eager to eat. There is no shortage of options when it comes to choosing a container for fermenting your vegetables, fruits, or condiments. The jars from Bormiolio Rocco are one of the best quality jars that can be used for making sauerkraut.Even though the disk method can also work with brined vegetables, there is always the chance that after a few days you will see it floating on the brine. Knife: Depending on your recipe, you’ll want a sharp knife that makes shredding easy and maximizes surface area for fermenting. I know it might sound complicated but I promise you it is not and you will see it for yourself in just a few lines. Sure enough, if you use them in jars where mouth and body have different diameters, sooner or later you’ll see your ferments start to float and be exposed to oxygen.

Why Everyone Should Ferment with an Airlock | Fermentation Recipe

Moulds begin to sporulate and colonise the ferments way before you are able to see them with your naked eye. Often times, though, even after covering everything so thoroughly, you will notice that some vegetables, herbs and spices begin to float. Never attempt to just remove the moulded area thinking the rest will be fine, because there is a great chance it won’t. There should be something here for everybody. I cover the overall best jars for sauerkraut and budget-friendly jars, jars of various sizes, and jars with different types of lids. Just a few examples of the jars I use.

Don’t let this low-tech simplicity scare you; fermentation is one of the safest food preservation strategies. It’s the perfect way to improve the shelf life of homegrown produce without any more effort than prepping the ingredients and waiting for microbes to do their job. Compare it to canning, which requires you to sterilize and boil jars for long periods, and you’ll see the appeal of fermentation’s simplicity. 2. Enhanced Flavors: Using a canning jar or other glass jar with its lid tightly closed is another option when fermenting vegetables. In both alcoholic and lacto fermentation the main goals, among others of course, are to allow CO2 out without letting air ( oxygen ) in. As you can see you don’t even need to get creative and put effort in making a diy fermentation jar of some description.
