Hazan and Hartnett use thyme, which I find a bit strident, and Hazan's parsley disappears without trace. Especially because of the books layout and concise writing, it makes you want to try its recipes - unlike some cookbooks that are nice to look at but basically never used. This is also the great tragedy of Italian cooking in America. It does not mix well with Big Food in America. However, the bulk of the fortune is actually the result of an exceedingly fortuitous marriage in 1677 when Sir Thomas Grosvenor wed 12-year-old Mary Davies, the heiress of a City of London scrivener. Her dowry included 500 acres of boggy swampland and meadows to the west of what was then the boundary of London.

Few surprises here: like many Italian dishes, this starts with a sofrito – the slow-cooked holy trinity of onions, celery and carrot also known as a mirepoix or simply a soup base. Del Conte leaves out the carrot, possibly because it disrupts the "bianco" nature of her recipe, but I like the sweetness it adds, so I'm going for the lot, though the red onion in the River Café Classic Italian Cookbook proves a little too much. The bowl can have various shapes, including round, oval, or more elongated forms, depending on the intended use of the spoon. Although Frankfurt is just 3 hours away by car we missed the event - talking about being jealous... With only minor exceptions this part of Mary Davies’s heritage has remained virtually intact to the present day and forms the Grosvenor estate in Mayfair.”

It is also beautifully laid-out and presented, with crisp imagery, capturing both the essence of the dishes, and the ideal, Italian place setting. And it’s also easy to follow too. The new title is broken into six, straightforward chapters: Basic Recipes, Appetizers, Starters, Main Courses, Side Dishes, and Desserts. Helpful recipe symbols indicate those that are gluten-free, vegan, vegetarian, or dairy-free; those that require five ingredients or fewer; recipes that can be completed in 30 minutes or less; and dishes that can be made in a single pot for minimal clean-up.

First of all, I want to be clear that this review is for the new, 2011 edition. This book has been updated and includes 400 new photographs. I was blown away by the size of this cookbook, and things just kept getting better from there. The quality of the book is outstanding with nice quality paper, sewn binding and a ribbon bookmark. I was a little surprised that there was only one bookmark as another cookbook from the same publisher that is much thinner has two bookmarks. This book could really use at least two, but that's a minor detail and does not detract from the overall book quality. The sewn binding gives it a sturdy feel that gives you the comfort that this book isn't going to fall apart if you use it very often--which I fully plan to do! Turn the heat down and add three quarters of the butter to the pan. When melted, add the onion, carrot and celery, plus a sprinkle of salt, and cook until soft.
