The King of Prussia, Tristam Davey, Cruel Coppinger – Cornwall has no shortage of famous smugglers in our rugged history. They smuggled in rum, they smuggled in gin, but most of all they smuggled in brandy, lots and lots of brandy. An explorer and an author found a farm nestled between the sea, the rainforest and the mountains. It seemed perfect, for they had a vision to create different types of spirit - spirits of the land and close to nature. As Australia’s first agricultural rum distillery we are developing this style of rum with a farm to bottle™ philosophy, using sugar cane grown 100% on our farm.
Ink Gin — Ink Gin
Traditional small batch distillation meets modern and exciting flavours with the inclusion of 13 choice botanicals. These range from fiery pink peppercorns to soothing chamomile, and even salted grapefruit marmalade. When mixed with Fever-Tree Indian Tonic, it undergoes a natural colour change from cool blue to subtle rose pink. Butterfly pea flowers are highly sensitive to pH. When the floral-infused Ink Gin is mixed with something of low pH (including gin's best friends; tonic water, lime or lemon), the colour changes dramatically from blue to blush pink. Not magic – just science.On the nose there is juniper, coriander, pine, and citrus followed by a heavy dose of sweet orange. Ellis Gin Butterfly Pea is a lovely herby gin that’s coloured and flavoured by, you guessed it – Butterfly Pea. A favourite treat of Anne Boleyn and her ladies in waiting, marmalade has long been a British breakfast tradition. This natural floral infusion gives a remarkable and lustrous quality, most elegantly displayed in their signature Ink & Tonic, which changes colour from deep blue to blush pink when mixed.
