It takes minimal maintenance to keep it in top shape (like a cast-iron pan, simply dry it immediately after use and washing, then wipe down with oil to prevent rust) so it’s an easy item to add to your pizza-making process. Depending on the type of baking stone used, they are generally safe to use up to 600 degrees Fahrenheit. The reason overtopping increases the baking time is that to get crispy, the water in the pizza has to evaporate first. Similarly, avoid putting frozen food onto a blazing hot stone (yes, that includes frozen pizza) and let the stone cool completely in the oven before removing or washing it. However, we have yet to find a rectangular cast iron stone, only circular pans, which are trickier to use.
I only tested the cast-iron pan on a charcoal grill because its size, shape, and material were best suited for that use. It’s most commonly made from clay, ceramic, or cordierite to imitate the hot floor of a pizza oven by retaining and conducting heat.
