If you’ve always wanted to but been too afraid to try Paella, I can assure you – there is no reason to be scared! If you approach it the right way – and I like to keep my recipes as risk free as possible – you will end up withrice that’s cooked exactly to your tastein a saffron infused, flavour loadedsauce with all your seafood cooked to perfection. Paella is a rice-centered recipe, and it demands using a special kind of rice, known as bomba rice. Certain varieties of rice are more common than the others. Occasionally, I like to cut most carbs and sugar out of my diet, which is a bit of a struggle when I'm around Antonia! The last time I was eating healthy she bought me two enormous bars of chocolate and made her famous arroz con leche. Seafood: Everyone's seafood paella recipe is a bit different, but usually, it will include squid or cuttlefish, shrimp or prawns, and shellfish such as clams and/or mussels. My family EATS – so I’m hoping to make a substantial amount 😂 but I’m not certain what to adjust the servings to base on the size of my pan 😊 However it is important to note that just because you are using arborio as your substitute, it does not mean that you will get a risotto like consistency when making your paella. Add the broth slowly and stir frequently -- just like when making risotto! This allows the rice to absorb liquid little by little and release its starch to the delicious sauce. Basmati rice has a distinctive hue and nutty scent. In terms of size, it’s shorter than jasmine rice and healthier too. The liquid to rice ratio for paella is usually 1 cup of rice to 3 cups of liquid which is on the softer side than ideal. I use slightly less (2.3 cups liquid per 1 cup rice) because seafood drops a LOT of liquid (especially mussels) and you can always add more water/broth at the end to soften / finish cooking rice but you cannot UNDO overcooked, bloated, mushy rice.

Rice Alternatives for Paella

You don’t need a paella pan. Any large skillet will work fine – or even a wide pot. In fact, paella pans require more advanced cooking skills because the everyday paella pans tend to be quite thin which makes the rice veryprone to burning unless you have a stove burner made especially for paella (they have wide rings that turn down pretty low). Add the rest of the milk about ½ cup (120 ml) at a time, stirring between each addition until all the milk is absorbed. If you want to taste the tender and smooth flavor and all the ingredients of the dish, do not hesitate, bomba rice is your perfect option. Manchego cheese: Look for a cured Manchego, which will have a more intense flavor and drier texture. If you can't find it, you can substitute any cured sheep's milk cheese, including Parmesan cheese. Basmati rice is a fine substitute for bomba rice. It has a nutty flavor. This type of rice is incredibly fragrant. It belongs to the long-grain rice form. When basmati rice is cooked, it remains very much separated.

Paella rice– as discussed above. Buy anything labelled as Bomba, Valencia, de Valencia or Calasparra – or simply “paella rice”! I was in Barcelona over New Year’s Eve and was thoroughly disappointed with my paella experiences. Then I decided to give it one last try close to the coast, and oh my God – it was the tastiest paella I had ever had (and I have a Spanish mother-in-law who makes a pretty good Paella). The Calrose rice is a great substitute for bomba rice. Calrose rice is easily available in grocery stores because it is cultivated in California. Keep going until you've added ⅔ of the broth. Then add in the cooked mushrooms and any juices they've released. Calrose Rice: Food blog, The Spruce Eats, states that Calrose rice is another great alternative. Calrose rice is typically cultivated in California, so it is a great domestic product that can be available to people across the country.

Is Paella Rice the Same as Arborio?

Sorry in Valencia, paella is our big dish, and this is rice with things, I’m sure it was delicious, but it’s rice with things. Calasparra Rice: This rice is almost identical to bomba rice. The only downside however is that this rice is pretty much exclusive to Spain and it will be extremely difficult to find if you live elsewhere.
