Rum, according to Sainsbury's recent drinks trend report, is about to take gin's crown as the most popular drink in town. Soz, gin - you've had your time. And if I see one more fridge magnet that says, "Let the weekend be-gin", I'm going to lose it. This cookie is set by Rubicon Project to control synchronization of user identification and exchange of user data between various ad services. Rum from France? Who knew? Biggar & Leith is an independent spirits merchant that brings us this unique product, a Caribbean rum that is aged with fresh ginger root and spices in the barrel. Based on a 19th century French recipe, the aging, spicing, and blending all takes place at a small family distillery in the Cognac region. Caramel color is added (and it’s a dark spirit), per the label.

If you are drinking neat spirits, you just need to be mindful of the alcoholic strength before you sip. If you don't prepare your palate, then you'll potentially have a poor experience. Cask strength rums can be up to 60% ABV, so you might want to follow your first sip with a mouthful of water. You should also start with small sips – just enough to wet your tongue and get used to the fact that something strong is coming. Then you can take bigger sips, which will allow you to explore the flavours. How to store rum I find that if the presentation strength is a little too high, or you want to lower it to allow easier exploration of the flavours without the sting of alcohol, then adding a little room temperature water is the best approach. When it comes to tasting, then actually something like 95% of what you're getting flavour-wise comes from the aroma alone, so it's worth spending time nosing on a spirit to really understand it. There is a specialist glass for nosing called the NEAT glass, which is great for allowing the aromas to be revealed.

When a bottle gets down to about a quarter or a fifth remaining, then the rate of oxidation really isn't going to make the spirit any better, so it's time to finish the bottle (you’re welcome…). If you've got something very special that you want to keep in the best condition, then using an argon preserver is a good move (argon is heavier than air and sits on top of the spirit stopping the air from getting at it). Spytail elects to blend its rum in a manner that pays homage to this historical practice. The company sources aged rums from the Caribbean, specifically Trinidad and Guyana, and proceeds to blend them within its cellars. The blend produces two notable rums: Spytail Cognac Cask and Spytail Ginger. Spytail Cognac Cask involves Caribbean rum aged and subsequently finished in cognac casks, providing a nuanced layering to its flavour profile that aligns with the region's renowned spirit. Spytail Ginger, on the other hand, is a dark rum aged in cognac casks and infused with ginger and additional spices. This variant offers a contemporary take on traditional spiced rums, attributing its unique character to the fresh ginger sourced from the Far East and carefully chosen spices. Both rums stand as a testament to the Spytail Rum Company's commitment to aligning modern spirit production with time-honoured tradition and historical narrative. Adding ice is quite commonplace, and that's okay, but ice will both dilute the spirit and the cold temperature will mask a lot of the flavour. The Story

In the world of spirits, things are generally simplified down to white and dark spirits. White being the likes of gin and vodka. And dark being brandy and whisky, for example. Rum has the same problem in that the world likes to simplify things, but as much as we'd like 'white' rum to mean that it's an un-aged offering, and that 'dark' equals aged, it's not that simple. And even if it was, it goes no way to indicating what the flavour might be like. What’s a Spytail? Says the company, “Spytail is named after a legendary submarine — plans for which were discovered by our distillers. The first mechanical submarines in the world were invented in France — and tested on the Charente River which flows nearby our distillery. These were the submarines which Jules Vernes used as the inspiration for his famous novel — 20,000 Leagues Under the Sea.” The question of where rum came from originally is a big topic of conversation. For example, sugarcane as a crop – from which rum is made – has been around for several thousand years; moving as it did from Papua New Guinea, through India and the surrounding areas, following the spice route, through to North Africa and Southern Europe, before heading off to the Canary Islands, Madeira and then the Caribbean and the Americas. Serving temperature comes up a lot as a question, and the default answer is room temperature. This might vary quite a lot depending on if you're in the tropics or colder northern climes, but there is no need to heat your rum. If it gets a little warmer through the glass being in your hand, it will be just fine. Mixing your favourite spirit is something you should feel comfortable with. Like other spirits, there are some lovely examples of rum that are so delicious on their own that you wouldn’t want to mask any aspect of them, and so neat is the only way. Rums that have been matured in American oak casks or ex-bourbon casks (which is the default option around the world) develop a natural sweetness, which is really nice when drunk neat.

Keep your bottles out of direct sunlight as well. The UV component of sunlight can be quite hard on spirits. But then that's the same for any beverage to be honest. What temperature should rum be served?
