Once the domain of gourmet restaurants, white asparagus is already a steadfast favourite in some European countries – it's even known as 'white gold' in Germany. We take a closer look at why white asparagus should be on your vegetable list this year. What is White Asparagus? Tip the cooked asparagus into the pan and disperse evenly. Continue to gently lift the more cooked parts of the frittata, allowing the liquid egg to slip underneath them until a happy, soft and curd-like medium has evolved. This should take around 2 minutes.

The UK asparagus season runs from April to June, and only one area of the UK—Worcestershire—produces white asparagus. Part of the lily family, white asparagus is nowhere near as popular in the UK as the green variety. However, in Germany it is eaten in abundance when in season, with the average German eating two kilograms a year.

Put the tofu in a bowl and add the ground sesame seeds, sugar, light soy sauce and miso and mix thoroughly. Roasting and grilling are both good ways to achieve a caramelised flavour from white asparagus and (weather permitting) you could even cook it on the barbecue to impart a lovely smokiness. White asparagus is so called because of its pale colour which comes from it being grown entirely underground and therefore not developing the chlorophyll and green colour that asparagus that is subjected to sunlight gets.
