About this deal

For people with celiac disease, gluten will trigger an autoimmune reaction, which causes inflammation in the small intestine. This serious condition can only be treated with a lifelong gluten-free diet. However, most lectins are destroyed during cooking and processing, and more importantly, most of the grains and other foods that contain lectins are generally eaten in cooked form ( 38, 39).

While individual experiences with IBS vary greatly, among the possible dietary triggers is a group of short-chain carbs known as FODMAPs. Like wheat, spelt contains a significant amount of FODMAPs, which can trigger IBS symptoms in susceptible people ( 29, 30 , 31).

Spelt has a high fibre content, which is good for your gut. A large body of evidence indicates that spelt is easier to digest than wheat, and is generally better tolerated. It also provides you with a broader spectrum of nutrients than wheat. Does Spelt cause bloating?

It’s no secret that whole grains are good for you. They’re a great source of fiber and other important nutrients, and they can help you stay feeling full longer. Pearled spelt is a whole grain, and it’s also a good source of protein. That makes it a great choice for people who are looking to add more whole grains to their diet. In the nineteenth century, there was a glutinous grain introduced to the United States. Spelt can be obtained as a whole grain or ground like flour, as well as cooked by boiling water and baking. The spelt will have more flavor if it is cooked in broth or water instead of water. It’s estimated that about 1.4% of people worldwide have celiac disease. A similar number of people are thought to have non-celiac gluten sensitivity ( 19, 25). There are a few substitutes for pearled spelt that can be used in recipes. These substitutes include white rice, quinoa, and farro. Each of these substitutes has a different texture and flavor, so it is important to choose the one that will best fit the dish you are making. Like wheat, spelt does contain a significant amount of phytic acid. However, the way it is processed can affect the phytic acid content. Another 2013 review showed that high whole grain intake (3 servings per day) was associated with a 32% reduced risk of developing type 2 diabetes. Refined grains did not show the same benefit ( 14 ). People who consume more whole grains are also more likely to maintain a moderate weight and have better digestive health ( 12, 13).Similarly, an analysis of over 14,000 people found the highest intakes of whole grains were associated with a 21% reduced risk of heart disease compared to the lowest intakes ( 8). As with phytic acid, the traditional processing of grains through soaking, sprouting, and fermentation significantly reduces the lectin content ( 40 ). Ancient’ means not changed by human meddling for centuries, though as I find out, it originated from crossing Emmer grain with wild grasses. Whether it was a natural process or not, that I don’t know, but at least it has been spared modern agricultural crossing and gen mods.
