About this deal

Understandably, the immediate impact on the palate is the peat smoke, but there's so much else going on here, too: smoked olives, seaweed, salt and pepper, all placed on a gently sweet bed of toffee and vanilla fudge. Their 12 Year Old Single Malt Whisky shows lovely smokey notes of wheat and barley alongside toffee and a distinct whiff of bacon smoke. It can quench my peat desires, but still stay light and balanced enough to entertain other areas of my tongue and palate. I know many people would disagree with me, but its quiet sophistication seemed to upstage the fireworks of the Laphroaig, especially the solvent astringent overtones that amp up the peppery liveliness a bit much for me.

My friend happens to live with a backyard that opens out onto a lovely stretch of woods and fields with a creek meandering through one side.

Underneath that there is the faintest phenolic aroma, something slightly medicinal, but much less then say Ardbeg. Reduction has however ruined the creaminess we enjoyed on the palate, and as such we suggest skipping water.

Thanks to its strong taste, Caol Ila 12 years is best suited for peaty whisky lovers who prefer a multi-layered single malt. Caol Ila 12 Year Old is considered by many to be the perfect entry point into the world of peaty malt whiskies with its fresh, smooth-bodied character and delicate balance of flavours. Black olives, bright, intense honey, seaweed, ocean air, sea salt, licorice, herbs, malt, and gentle peat. Could disappoint those who like a more brutish, in-your-face whisky, but personally I find it really quite nice. About Caol Ila in general: My previous comments are sort of veiled criticisms of the 12 YO OB, but I do think it sits in a decent place among its Islay brethren.Within Douglas Laing's esteemed Old Particular range emerges a treasured expression – a limited, single-cask offering of Single Malt Scotch whisky. Caol Ila is the big work horse of Islay that produces peated whisky for Diageo's blends, of which Johnnie Walker Black Label is the best known one.
