Hibiki 17 Year Old Japanese Whisky is crafted from a blend of over 30 unique whiskies produced at both Yamazaki Distillery and Hakushu Distillery, including some that have matured in previously-used Umeshu casks (Umeshu casks are specially coopered casks that are used in the maturation of plum liqueur). "This is all done by hand — the traditional way," says Osamu Abe, the manager of Yamazaki Distillery, referring to the cooperage taking place at the distillery. In February 1899, Shinjiro Torii opened a store in Osaka, Japan, that traded in imported wines. Within a decade, Torii began producing his own sweet grape wine called Akadama Port Wine, which became wildly popular throughout the country. In 1923, Torri — fascinated by whisky his entire life — decided to expand his business and began constructing the Yamazaki Distillery, Japan's first-ever whisky distillery. Before drinking Hibiki, it’s worth familiarizing yourself with the brand’s multi-faceted approach, so you know exactly which flavors and aromas to pay attention to. Hibiki was introduced in 1989 by Suntory, originally with expressions having age statements of 17 and 21 years. Balance: Not as "harmonious" (as the translation of Hibiki implies), I find that although certain elements in this whisky work well, they do not combine in such a way as to elevate the overall experience, such as a very good whisky can do. Hibiki is more than just a mere brand of whisky: it’s a work of art, a harmonious fusion, and a brilliant example of everything the Japanese whisky industry is known best for. The vast number of whiskies used for each bottle – sometimes more than 30 per blend – reveals a fast-paced adventure for all the senses. It’s something no other whisky brand has achieved, perfected only with years of experience. With its unusual flavors like lychee and fig and full orchestra and aromas blended with a traditional smokiness, Hibiki is everything its name, “harmonious” represents, and more. Hibiki’s line is also a masterclass in bottle design. Every bottle of Hibiki is a decanter-level shelf piece, with 24 facets representing both 24 hours in a day and the 24 seasons ( Sekki) of the Japanese calendar. The label is also designed to mimic washi paper, which has a 1,500-year tradition in Japan. The anniversary bottles and special releases - especially the Mt. Fuji bottlings and the 30th Anniversary - are decorated directly onto the glass, somehow adding to the beauty and making the whiskey within part of the artwork.

Taste: Pepper first, followed by red wine (is that some sherry)? Light mouthfeel. A little "bitey". Pepper mellows to something vaguely reminiscent of radish while sherry dissipates, some citrus comes on too. Soft grain sweetness develops. Interesting bitter turn upon swallowing. Whiskybase B.V.
