About this deal

Turkish sour plums – A reader in Europe got them from a Turkish market and used them in this recipe. He said his umeshu tasted as good as the one he had in Japan! But the best part of the Myojo experience for Umeshu lovers is their drink-all-you-can offer for 1500 Yen, and it lasts for a whole 100 minutes. In this time, you can have your fill of Umeshu drinks and decide which one suits your taste best, so you can buy your bottle later on. The alcohol needs to have at least 35% ABV. That sounds very high, but do not worry. The alcohol will be distilled and diluted with the sugar and plum mixture. This will also reduce the level of alcohol in the drink to a normal amount. Pro Tip

In brewing its select sakes, Akashi Sake Brewery uses only the finest ingredients, which are all produced locally. For example, the company uses the yamada-nishiki variety of rice "a superior strain" grown in the region just north of Akashi City. By drinking Umeshu regularly, you can boost up your nutrient requirements and stay healthy at the same time. Fact: Although the ume flower blooms during the early-mid spring, the ume plums necessary for making umeshu only ripen during the early summer. You may have heard of Eikun , as the infamous brewer has been making impressive advancements into the international brew market, particularly in recent years. In its turn, Eikun isn’t an umeshu -focused brewer, either, but as with Kubota Shuzo, this allows them to experiment, and be more versatile in their selection of brews. Umeshu can be served at different temperatures; chilled or with ice, room temperature, or even hot in the winter.

Resilience & Tenacity

With genshu umeshu , none of that happens, and what you are getting is basically natural, straight-up umeshu as it came out of the brewing process. Ideally, undiluted plum wine is best served on ice, or slightly diluted, as it’s considerably stronger. Nigori Before sake, I would’ve immediately reached for white wine and it would’ve been fine, but this sake was top-notch; more than “food friendly,” it truly elevated the dish as the plum tones complemented the sherry/soy sauce umami flavors. I couldn’t get enough of this sake and lobster! | Photo by @thesakemom. May 2018 (12 months!) – To make the video above, we opened and tasted the plum wine, which is why the wine is slightly reduced. 🙂 What To Do with the Spent Plums in the Umeshu? Finally, let’s finish it up by talking about some of the nation’s favorite brands of umeshu . These are commercial beverages you can find in most stores, straight from the hands of Japan’s most honed and infamous brewers.

After a year, you can finally get to enjoy your plum wine. The flavor and fragrance of the plum wine ripen as itages, so make sure to store in a cool, dark place for years to come! You might want to start making two batches if you can’t stop drinking it. 😉 Some of the brands below are, in fact, so famous that they can even be found in international bars.I'm sure you'll agree that nothing screams Christmas like Plum Sake. What? You've never even heard of Plum Sake?!! Fair enough, nor had I until a few years ago, but now, along with Bing Crosby, Burgundy, and Star Wars Lego, it's on my Christmas essentials list. This sweet plum liqueur has a lovely fruity tang, stopping it from being in any way cloying. It also has some lovely almond notes and just one sip can elevate even the most glorious of mince pies to previously unimagined levels of gastronomic glory! In Japan, we have a liquor called “White Liquor” (ホワイトリカー), whichwe use for making plum wine or fruit wine. If you can’t find it, don’t sweat it and use shochu or vodka.
