I have a similar issue to the OP, with a PS5 on the way, but with a 4K LG TV that has only ARC (so no full uncompressed ATMOS passthrough etc. and unable to use the sharc) and an AVR with no HDR passthrough (currently using an HDfury for Sky Q as my AVR is also pre HDCP2.2, but that's working fine). My LG B9 does have optical out I think but I'm not sure if that can be used to redirect sound from the PS5 to the Sony amp by connecting the optical cable from the TV to the amp with the PS5 connected to the TV via the HDMI 2.1 port.
