About this deal

Before starting, lay out all the ingredients you’ll need for your recipe on the counter so they’re all easy to reach at the right time. Unlike with many pâté en terrine recipes, you don’t have to worry about keeping your ingredients chilled with liver pâtés you make on the stovetop. This sautéing will only take a couple of minutes if you’re only using herbs and spices. If you’re using onions, fry them up first and throw in the herbs and/or spices at the end for a minute. Step 7 for making liver pâté: Fry the liver Once your pâté is in the containers, gently push it down with a spatula and, still gently, bang the bottom of each container on the counter to push out air bubbles. I do the banging on a cork trivet on the counter as that seems better than hitting the counter directly. You could also put down a tea towel to soften the blows. Step 13 for making liver pâté: Cool your pâté in the fridge

Robert Lustig, expert pediatric endocrinologist at UCSF, confirms this. In his fantastic lecture, The Bitter Truth, Lustig explains biochemically how sugar and high-fructose corn syrup (which are identical metabolically, half sucrose/half fructose) are the culprits behind our most common diseases, including: If you’re not convinced by the nutritional advantages of liver, I hope this recipe motivates you to explore different ways to prepare organ meat so that taste and smell aren’t an issue. And if you’re looking for more evidence, read through my guide on why you should include organ meat in your diet. Put it through your strainer. If you’ve already done this, you could try using a finer-mesh strainer (this is where a tamis comes in handy). Butter - Butter is preferred over oil because it adds more flavor. However, if using oil I recommend olive oil. This part is a little gross but not as gross as cutting beef tongue or prairie oysters. You’ll be okay. Step 6 for making liver pâté: Sauté the aromatics I love to garnish my little pate bread bites. They look more presentable and more valuable that way. Change to dough hook on stand mixer. Add flour, sourdough starter and milk. Mix for 7 minutes on #2 setting. Dough should be pulling away from sides.

Making some homemade Danish liver pate is actually easy. The first thing you have to do is to prepare the pork liver, pork fat and the onions. This is done by running the three ingredients through a meat grinder minimum two times. This will make a nice liver, fat and onions mixture. Transfer the liver pate to two rectangle foil trays and place them in a large ovenproof pan. Fill the oven pan with water so that the water level reaches the middle of the foil trays. This water bath will make a good heat transfer from the oven to the liver pate. Immediately after frying, while still hot, toss doughnuts or doughnut holes into cinnamon and sugar mixture. After, allow them to rest in a paper bag or on a plate to cool. In addition to that, you’ll need a frying pan with a lid, measuring spoons (or a good eye), and containers to store the final product.
