In the world of baking, a traybake cake (or tray bake cake) is a cake that is baked in a square or rectangular tin and cut into portions once baked. Unlike typical sponge cakes, where layers are sandwiched together, a traybake cake comprises one layer. Don’t be tempted to slice apple rings onto the top of the cake. I did this once and found they are hard to eat as they tend to slide off during the first bite of the cake. Chunks are far better. The more precise you are when it comes to lining your tin with parchment, the neater your cake will turn out plain (all-purpose) flour: you can use self-raising flour in this recipe – just skip the baking powder. Also, try replacing ⅓ of plain flour with spelt or wholemeal flour.

Though any eating apple can be used, my preference for this apple cake tray bake is to use apples with a crisp bite and zesty flavour. My top choices would be: I have used Jazz and Pink Lady apples to make this cake, but any sweet eating apples will work. What size tin do you need for this cake? To be honest, I have never tried to freeze it. However, I have frozen cooked apples successfully before, so I don't think there will be a problem.The thing I love about a traybake is it's simplicity and this deliciously easy Cinnamon Apple Cake made from scratch is as simple as it gets. This recipe has been devised using eating apples. Cooking apples are not a suitable substitute as they emit alot of liquid during cooking which would soak into the sponge cake and affect the consistency. There aren't many substitutions to be made with an apple traybake, but there are a couple of simple ones that you may want to experiment with. After the 2 day period, you'll start to notice the edges of the cake drying out a little bit. You can store it in the fridge for another day or two, but fridges tend to dry cakes out.

Demerara Sugar - Its large crystals sprinkled on top of the cake before baking will give you a little bit of lovely crunch. You could substitute it with light brown sugar but the crunch will simply not be there. Make the stewed apples and crumble topping first so that they can cool down. For the stewed apples, heat the apples, light brown sugar, cornflour, cinnamon and mixed spice in a pan on a low heat, cover with a lid and cook until soft (10-15 minutes). For the crumble topping, mix the ingredients together and spread out on a baking tray, bake until golden. Leave both things to cool before adding them to the cake. The butter must be soft. Room temperature is fine as long as your room isn't cold. If you haven't taken the butter out in time you can soften it in the microwave, but take care! Melted butter doesn't work the same way. Sugar: I chose to use light brown sugar to add both a warming colour to the bake and a hint of caramel to the flavour of the sponge. Demerara sugar is also needed for the topping – it adds a tantalising crunch to the texture of the cake as it is eaten. Self-raising flour - If all you have at home is plain (all-purpose) flour then you can make your own self-raising one by mixing it with baking powder. Simply sieve or whisk together 3 teaspoon of baking powder with 250g of plain flour required in this recipe.But I'm not going to tell you any of those things. What I am going to tell you is that I have been making this easy apple cake tray bake for years, and I can safely say it has never failed once. I call it my one-cup apple cake because you basically just need one cup of everything. It's moist, it's custardy and best of all it's delicious. I use whatever apples I have at home. But I find this traybake works best with tart apple varieties, like Granny Smith or Braeburn. However, avoid cooking apples as they go to complete mush. Core your apples. Peel them if their skins are tough, but I rarely do that. Skins soften whilst baking and I hardly notice they are there. Slice your apples very thinly. After that, squeeze some lemon juice over them to prevent them from browning. This tender and delicious cake is comforting, easy to make and does not require any special equipment to make it! Mixed spice is a British spice blend containing cinnamon, coriander seed, nutmeg, clove, pimento and ginger. If you can't get hold of it, you can use a mix of ginger, nutmeg and cinnamon, or use a Pumpkin Spice mix instead. Spread the apples evenly over the cake mixture and lightly press them in. You don't need to be too neat when layering the apples – in fact, the top looks more interesting if you scatter over the apples in a random pattern.
