Beginning its maturation in American white oak, the liquid is then separated into two distinct paths - one embracing the richness of Palomino sherry butts and first-fill bourbon casks, and the other aging gracefully in bourbon barrels. A harmonious union follows, culminating in a final maturation within Tawny Port pipes, a process that imparts exceptional depth and character. Thankfully, there are perks to being a spirits writer, when it comes to setting up tastings. In the last few years, I’ve been consistently expanding my knowledge and tasting data of classic Scottish malt distilleries, falling in love along the way with the likes of GlenDronach, Oban, Arran and Glenfarclas. There was one prominent Highland name on my list, however, that I’d never sampled: The Dalmore. Figuring it was time to finally familiarize myself with this particular, sherry-rich lineup, I reached out to the distillery and ultimately ended up with samples of all 7 core Dalmore expressions. This annual limited edition begins its maturation journey in American white oak ex-Bourbon barrels, giving a base of soft vanilla and honey. Further enhancement follows, with a longer finishing in hand-selected 30 year old Matusalem Oloroso Sherry casks from the González Byass bodega in Spain, exclusive to The Dalmore. Dalmore Cigar Malt was discontinued in mid-2009, causing quite an uproar indeed. The whiskies used for the reworked version were actually slightly older, but naturally still pair perfectly with a cigar.
