About this deal

In 2017, before Matchmakers reached its 50th anniversary, Matchmakers became available in a new limited edition 'Salted Caramel' flavour, and from the 50th anniversary in October 2018 another limited edition flavour of ' Gingerbread'. September 2019 saw another limited edition flavour's appearance in a sky blue box called 'Maple & Pecan'. [2] Homemade bakes are usually best on the day they are made, as they don’t contain the complex preservatives and additives that shop-bought cakes have. So if you can, you should try and make your cake on the day you want to serve it. This beauty is essentially a carbon copy of my Easter chocolate cake, but I just couldn’t resist. Once I had found the gingerbread Matchmakers in Tesco, I desperately wanted to do a festive version of the cake, and I just knew you guys would love it all as well! You can use any flavour Matchmakers, but the gingerbread ones were too good to not use!

The thing that makes the frosting so extra special is the evaporated milk that is mixed in. Without it, it’s just a regular chocolate buttercream frosting, but with it… it tastes insane. Genuinely, I never understood before I made the frosting how it could be so delicious, but my god it was. It’s the sort of frosting you’d want to sit and eat with a spoon. Maybe dip in a biscuit or two. Decorative seal For the buttercream, mix together icing sugar, butter, cocoa powder, milk and peppermint extract. Place the first sponge onto your cake stand, cake board or plate and pipe or spread some buttercream on top of it. For the ganache you could try using a vegan recipe like this one. Or you could simply replace the ingredients in my ganache recipe with vegan chocolate and vegan cream. I recommend putting the cakes in the fridge for 30 minutes before trying to decorate with buttercream on the sides as the sponge is so lovely and light it might crumble a bit if you don’t!

Can you make the cake with plain/all purpose flour?

Some people also melt chocolate and then add hot cream over it, which can help to reduce the risk of splitting further, although it will take longer to cool to a spreadable consistency. Buttercream is also much softer and more prone to melting due to the lower melting point of butter, while ganache holds its shape a little better as chocolate has a higher melting point. I haven’t got golden syrup, can I use sugar? If you want to make a bigger or smaller cake then go ahead. I’ve got a great tool that can help you change the recipe for whatever size you want. Yes, a stand mixer would be ideal for making your Matchmaker cake. You’ll need to whisk together the wet sponge ingredients and sugar initially and then sift in and whisk the flour, cocoa and bicarbonate of soda.

That’s when easy, no bake recipes like this chocolate orange fridge cake come in very handy. All you need to do is crush up some biscuits, melt chocolate and butter together, stir it together then pop it in the fridge to set. I found the gingerbread Matchmakers in Tesco, but they all work! The mint flavour would be delicious. However, you shouldn’t add any more chocolate to the ganache as it must be a 50/50 split of chocolate and cream to ensure it comes together properly and doesn’t split. How should I store Matchmaker cake? Decorate with the remaining matchmakers and chocolate orange. Place in the fridge for 2 hours or until firm. In the UK you’ll see a Best Before End Date stamped on your egg box and eggs. If you have stored your eggs in the fridge, they may be safe to use past that date as long as they show no signs of spoilage (that unmistakable rotten egg smell, discolouration or change in texture). However, if your eggs have a Use By Date, then they should not be eaten past that date even if they seem fine.

It’s always best to use fresh milk for cooking, as the way milk cooks can change due to the sugar and protein breaking down over time. If your recipe is reliant on milk, using older milk can impact the quality of your bake.
