About this deal

The Happy Foodie team is always game for a Cook from the Book, but never more so than when it promises to yield the likes of chocolate chip brownies and Easter-themed fudge with minimal ingredients and no fuss. From quick scones to a Biscoff lover’s dream cake, you’ll be surprised at what just 3 hard-working ingredients and a little baking alchemy can create. This Oreo twist on a millionaire’s shortbread features a crushed Oreo base topped with layers of homemade caramel and white chocolate and finished with whole Oreo cookies. Cheesecakes are always a big hit with you guys, especially no-bake cheesecakes, and I can totally understand why!

There are so many different varieties to try here, from snickerdoodle to apple pie, speculoos to Oreo-studded, as pictured here. The crunch of the cornflakes mixed with chocolate and peanut butter feels like a decadent version of the chocolate cornflake cups that you’d have at parties as a child. Despite loving baking, I’ve never made a cheesecake before, but I felt like a pro by the time I’d finished this recipe. No-Bake Twix Cheesecake An easy to make no-bake cheesecake with a buttery shortbread base, a creamy caramel cheesecake filling, and a chocolate ganache topping, with lots of Twix pieces to finish it off Base:350 g shortcake biscuits (finely crushed)130 g.The blueberry running through the bars and the crumble on top make these the perfect spring centrepiece moment – my friends better be impressed! My recipes have been featured in over 100 news articles worldwide and also shown on national TV… NATIONAL TV! Make these super fudgy brownies that are packed with chocolate chips and big chunks of cookie dough throughout. What I thought: This was a super simple recipe that was really easy to pull together – mini eggs and white chocolate is a dream combination. Eloise Head, known online as Fitwaffle, has amassed a following of more than 13 million across her social media platforms with her fun, simple and indulgent bakes.

We brought these into the office and they certainly got the seal of approval from the team who were experiencing the mid-afternoon sugar dip. These brownies are just delicious, with chocolate chips, cocoa and chocolate spread making them ultra-indulgent but the dark chocolate makes sure they’re not too sweet. What I thought:I’m a slight white chocolate fiend so knew I had to bake these blondies as soon as I saw them. Red Velvet Cookie Dough Bars 225 g unsalted butter (softened)150 g granulated sugar75 g light brown sugar2 large eggs1 tsp vanilla extractRed food colouring ((Sugarflair Red Extra))270 g plain flour1 tsp bicarbonate of soda1 tsp salt230 g white chocolate chips. Finally, you'll find a chapter of my most popular special occasion bakes that need a few more ingredients but are totally worth it! I can’t begin to describe how moreish the end result was and would highly recommend this bake as an all-around simple and delicious recipe that’s perfect for sharing with friends and family. With many made using just 3 simple ingredients, her enticing creations, which include gooey-centred cookies, towering celebration bakes, teatime pick-me-ups and more, are all well within reach for all bakers and budgets. When the pandemic hit in March 2020, I quickly made the decision to start sharing recipes on my Instagram account.

Baked In One is packed full of Eloise’s creative inventions, but you’ll also find plenty of recipes for the classic in there too. I love biscuit spread on everything so having it mixed in andswirled on top of the bake is an instant winner for me. The cream cheese frosting added a nice bit of sweetness to contrast with the blackberry, and it lasted really well for a few days.Find fifty 3-ingredient recipes, including my crowd-pleasing Cookies and Cream Cake and delicious Chocolate Caramel Fudge, plus all of your favourite 4- and 5-ingredient recipes including Speculoos Ice Cream and a cinnamon roll made in a mug! These super soft bars of cookie dough are inspired by the classic cake flavour, with plenty of cocoa powder to make them perfectly chocolatey, plus red food colouring and white chocolate chips to recreate the classic red and white colour combination. Layering the cookie dough on top of the caramel was a bit tricky, but the advice to break it up into small pieces was spot on. This is definitely a recipe I’ll go back to, I’m even thinking of customising it seasonally, for example with fresh berries for summer or dark chocolate with orange sprinkles for Halloween. One of our favourite chapters in Baked In One is dedicated to celebration bakes, with everything from spooky Frankenstein brownies for Halloween to these brownies topped with creme eggs for Easter.
