Fresh ingredients. Ensure your self-raising flour, baking powder, milk, and eggs are fresh. Because these items can go stale and off. You want them of their best quality so they can create the nice cake you want. Mix the icing sugar and instant coffee powder together. Beginning with 1 tablespoon of preboiled hot water. You may ask why preboiled water, it's because I am old school, and preboiled kills off any bacteria in the water.

Apple sauce - provides additional flavour and moisture. You can swap this out for an equivalent amount of ripe mashed bananas or well-drained canned crushed pineapples.Replace the dado set with a standard blade, raise the blade height to 3/8 inch, and then set the saw fence 7⁄16 inch from the blade. With the bottom edge against the fence and the inside facedown, cut a kerf in each short side. Now adjust the fence away from the blade about 1⁄16 inch, and make another pass through each of the short sides. Step 4: Cut out the handles Self-raising flour - if you don't have self-raising flour you can use plain flour and add 1 teaspoon of baking powder for each cup (140g). Because it is baked in a traybake (Americans call it a sheet cake) tin, there's no fussy layering involved. This is my adapted version of a banana loaf recipe. I love banana loaf but often find it can be a little too moist in the middle. Baking it as a traybake ensures it is fully baked through. The baking itself took about 35 minutes. But I had to leave the cake to cool down before completely putting the frosting on. This took me around half an hour.
