Each Flair Signature is: HANDCRAFT SHOTS OF ESPRESSO – The Flair PRO 2 is a 100% human-powered, manual espresso press. With the Flair PRO 2, you have a complete manual espresso machine that can produce professional quality shots of espresso from your home, or wherever you are. Add 70ml of boiled water and a dose of up to 24 grams to yield up to a 56 ml shot with beautiful crema. A burr grinder is essential for use with this product. MAJOR BREWING UPGRADES – The Flair PRO 2 features three upgrades over Flair’s other manual espresso makers including a removable stainless steel spout, an enhanced all-stainless steel bottomless portafilter with improved flow dynamics, and a silicone lever grip for better brewing ergonomics. The most common brew ratios that you’ll see are a ristretto, traditional and lungo shot. The ristretto shot is also known as a restricted shot, and typically features a brew ratio between 1:1 and 1:1.5. A traditional espresso is typically 1:2-1:2.5 and a lungo, or long shot, is usually about 1:3.

The heating system only heats the brewing head (not the water) and has three different temperature levels. It can be kept at 85C/185F, 90C/194F on medium, and 95C/203F high. In the past, espresso was measured by volume, where a single shot of espresso was roughly 30 milliliters and a double shot was roughly twice this volume, or 60 milliliters. However, this type of measurement is not accurate when it comes to really understanding what is going on with the coffee in your cup, as it doesn’t take into account how much coffee, or grounds, is creating that shot, or shots. In other words, 60 ml of coffee will taste wildly different if it comes from 18 grams of grounds vs 24 grams of grounds. The Flair 58 Plus is a barista level espresso machine, capable of creating and re-creating your favorite recipes from any coffee you own. As such, the 58 Plus requires a full brewing kit of accessories to ensure top performance.

The low-flow 18 gram basket is perfect to any home brewer’s kit, and allows for a dose range between 16-22 grams. This low-flow basket, when compared to the standard straight-walled basket of the Flair 58, allows for an easier dial-in process by allowing a grind that is coarser for proper extractions, thereby increasing the overall compatibility with a range of grinders. The straight-walled basket will require a grind that mimics a commercial machine. The low-flow 18 gram basket is perfect to any home brewer’s kit, and allows for a dose range between 16-22 grams. High-quality kettle– While a temperature controlled kettle is not required for brewing with the Flair 58 Plus, it will definitely make your workflow and experience more enjoyable. At a minimum, target a kettle with a thermometer so you can be precise with your thermal inputs.

Flair 58 is a fully-manual, professional grade, lever espresso press that is focused on maximizing the workflow and the espresso from at-home extractions. The Flair 58 family features Flair’s first industry standard 58mm portafilter as well as a more robust frame and lever for ease of extractions at higher pressures. To ensure that you’re able to get the desired weight of espresso in your cup, based on your desired brew ratio, it’s important to understand the size differences in the two brew heads that Flair products utilize: our Standard brew head and our PRO 2 brew head. The standard brew head has a maximum reservoir capacity, or maximum amount of water that will fit into the brewing chamber, of 60ml. But, the maximum output from the Standard brew head is just 45ml. In the PRO 2 brew head, the reservoir is 70ml with a maximum output of 60ml. This loss is due to absorption within the coffee cake during extraction, and it is important to note because, volumetrically, this indicates the upper level of espresso you can yield. As such, the standard brew head cannot yield a volumetric double shot, but it can easily extract a beautiful and balanced weight-based double shot of espresso. The preheat system on the Flair 58+ includes three different levels: low, medium and high, which roughly correlate to brewing temperatures needed for dark, medium and light roasts respectively. Turn on your preheat setting and feel confident that your thermal management is taken care of. And, if you’re feeling the travel itch, the 58+ features an easily detachable preheat controller, meaning that you can go off-grid and brew espresso anywhere.

Because of this, it’s important to measure your espresso shot based on the input weight of your coffee grounds compared to the output weight of the espresso in your cup.
