We started craving soups, stews, apples, and cinnamon in the mornings and evenings, but the hot mid-day temperatures still call for ice-cold, refreshing drinks. This cucumber gimlet is tangy and sweet, combining the spa-like vibes of cucumber water with the zing of citrusy lime. It’s perfect for summer, but it works in any season. Here are a few notes on how to make a cucumber gimlet ( see the full recipe quantities below): Lemonade made with this simple syrup and topped with lemon water [2 lemons and 3 cups of water processed in your blender, then strained] Make your simple syrup 1-2 days in advance… or do what I do and make a big batch so you’ve always got some in the fridge. Let it hang out in the fridge, and make a lot of it, depending on how many friends are joining you.

First and foremost, make the cucumber juice. Peel the cucumbers, and toss them into the blender. Blend for a minute or so, until well combined, then strain into a pitcher. Voila! You’ve got cucumber juice. 🙂 Vodka: Here's a little secret: all vodka is basically the same. No, really. So don't feel the need to pay up for a premium brand. That Kirkland stuff will be just fine, especially for a mixed drink like this cucumber martini. It’s super light and oh-so refreshing on a hot summer day. It’s a slightly healthier option than sodas or juices since it is only lightly sweetened and is mostly cucumber and water. This traditional Mexican drink is also called Agua Fresca de Pepino or Cucumber Agua Fresca (aka Cucumber Fresh Water). It’s made by blending the cucumbers with water and adding just a touch of sweetener. In Mexico, it’s a popular drink served by street vendors!Fresh Cucumbers: Cucumbers are made up of about 96% water so when you blend them up they tend to liquefy significantly. I leave the peel intact to get all the extra nutrients found in it but you can peel them if you prefer. Using cucumber vodka is a fun twist. We like it best with this flavored vodka, but it’s most classic with the botanical notes of gin, which pair well with the cucumber.For spears: Slice your cucumber in half lengthwise, then slice the halves into quarters. Finally, slice the quarters into eighths so they yield wedge-shaped spears. If you’re using a long cucumber, cut all the slices in half through the middle so they fit into your jar. Then, pour the juice in a jar or pitcher, and add in carbonated mineral water and ice cubes. Mix well and serve! Simple syrup: Using a liquid sweetener makes dissolving the sugar in your cucumber drink easier. Make your own simple syrup with an equal portion of water and sugar, then heat on the stove until it dissolves. You can also use a little bit of agave syrup or any other liquid sweetener you prefer.

Serve up your cucumber lime agua frescas with fresh cucumber slices, lime slices, and sprigs of fresh mint for garnish. Add chopped cucumber to a blender with simple syrup and lime juice and blend until smooth. Strain the mixture through a sieve to remove any cucumber pieces.
