About this deal

This glass pie plate is manufactured from lightweight borosilicate glass making it highly resistant to high and low temperatures making it suitable for use in your oven or freezer. Additionally, the stain-resistant glass doesn't retain flavours, so your pies will always taste fresh and delicious. In October 2017, the brand was awarded the label, Origine France Garantie, for all its ranges of pressed borosilicate glass. Otherwise it makes a beautiful serving dish at the dinner table, and cleaning up afterwards is simple. With a glass pan, you can monitor the browning of the sides and bottom of the pie crust as the pie bakes. We loved the look of this dish, especially the pretty and practical squared-off handles stamped with the Staub name, but found that its smaller size (it fit entirely inside all of our top selections) made it impractical as an all-purpose pick. That weightiness can translate to longer cook times — because the pan heats evenly but quite slowly, it is sometimes necessary to add as much as a third to a half more oven time to recipes to achieve thoroughly baked results. To calculate the overall star rating and percentage breakdown by star, we don’t use a simple average. While there was a lot to recommend for both the Emile Henry and Baker's Advantage pans, when put through their paces alongside the Pyrex Basics 9-Inch Pie Plate and other contenders, a few shortcomings emerged that kept them out of the top spot.

Some jurisdictions do not allow the exclusion or limitation on incidental or consequential damages, so the foregoing limitation or exclusion may not apply to you. Our deep apple pie cooked well in this dish – the pastry was crisp on the sides, but a little soggy on the bottom (we’d recommend using it for pies with drier fillings or without a pastry base).

Microwavable popcorn bags and browning wrappers are specially designed to concentrate heat in targeted spots, and may damage the glass. Namely: it should be versatile enough to yield evenly baked, golden crusts and thoroughly-cooked fillings every time, whether the task at hand is a fruit pie, savory pie, press-in crust, custard pie, or quiche. Ultimately however, we ruled it out as not versatile enough: when used for custardy pies, like pumpkin, the edges shrank slightly and the crust set faster than the filling.

Having used one at home for years, we were always happy with its generous capacity, its consistently excellent browning and its elegant European looks — compliments we heard repeated by many of the experts we surveyed, including Kate McDermott. Our apple pie cooked well and released easily from the ridges, but it had quite a wet filling, so the pastry base was a bit soggy. The champion of flaky, crisp, golden crusts, a metal pie pan is a no-frills, low-cost option every baker should have on hand. Adding liquid to hot glass may compromise the product’s strength, potentially resulting in breakage. A distinctly American brand—Pyrex glassware is proudly made in the USA, and has been used by generations of cooks and bakers from coast to coast. Deep-dish pans are great for two-crust savory pies, single-crust quiches, or pies that have two-layer fillings, like a lemon meringue or chocolate cream, when you want the first filling to leave some exposed crust to contain the topping.

These days many are also coated with nonstick surfaces that, while making for neat and easy slice removal, can be easily scratched by sharp knives and serving spatulas. Also, while the Staub company made its high-quality reputation with French-made cast iron cookware, these days many of its ceramic accessories (including this one) are made in China. The embossed pattern on the rim is designed to help prevent pastry from shrinking back, and this worked well for our pie. Some pie tins have a nonstick coating which can come in handy, although a properly baked pie should have a crispy, flaky, golden crust that slides right out of the pie dish whole, which would render nonstick unnecessary. Pies that require a longer bake time, such as double-crust pies, might be better suited for glass or ceramic pie plates that don't heat as fast.
