Silty areas can more easily liquify than sand. Clay deposits can exhibit thixotropic behavior and lose their shear strength suddenly due to vibration. (Add water to corn starch while slowly stirring to make it just liquid. Then let it rest. Is this a liquid or a solid? It’s a thixotropic solution.) To little heat will cause the pectin not to set and to much heat will break down the pectin also causing it not to jell.

What ends up happening is that some of the pectin gets overcooked and some is undercooked. Did You Over Measure The Fruit?For each quart of jelly or jam that you are recooking, you will need 1/4 cup of water, 1/4 cup of sugar, 2 tablespoons of lemon juice, and 4 teaspoons of powdered pectin. Measure this into a large pot and mix together.

Is this just part of their life and death cycle? I’m less alarmed than some because they’ve been a fact of life at local beaches and when I worked for a coastal non-profit I was used to them after a lifetime of trips to the northern “rugged” Assateague beaches. Or is the fact they arrive en masse and, well, dead seasonally a harbinger of issues and we’ve just seen it for longer in the mid-Atlantic. I should note they aren’t there for long. Maybe a week at most? Then by late August they’re generally gone. The warmest waters of September, I’ve yet to see them.
