After heating the fondue pot on medium heat I added 200 ml of dry white wine and let it heat up. Next, I added just under 14 oz. of fresh grated Swiss cheese and just under 14 oz. of grated Gruyere and let it melt slowly before slowly stirring in pinches of salt, pepper and nutmeg. A shot of cherry brandy helps so that the 1 tablespoon of cornstarch doesn’t clump as you add it next. This adds to the viscosity of your fondue. Once mixed you can turn the heat down to low and start dipping your bread, veggies or whatever else you’ve decided to pair.
