Production began in 2017 with spirit made using only local barley and Dartmoor spring water. This is then distilled through an old reconditioned alembic still from Cognac in France. English whisky is a liquor made in England using fermented grain mash. The history of whisky production in England is not as extensive as in Ireland or Scotland. But there are records of distilleries in the country from as early as the 1700s. To make this whisky, the Bimber team sources malt whisky from Scotland (with a minimum age of 12 years) and blends it before finishing it in casks that previously contained its own much sought after single malt. Unlike Scottish single malt, which must comply with Scotch Whisky Regulations, English whisky producers have greater scope for innovation. Most notably, Scottish distilleries are legally bound to use oak casks for maturation, while English whisky producers are free to experiment with new woods, and therefore new flavours.Unlike gin and vodka, which can be distilled and bottled within the space of a few weeks, there is a legal requirement to age whisky for a minimum of three years. While whisky cannot provide an immediate cash flow, the higher value of the spirit is future oriented, especially with the potential for creativity in the revitalisation of English whisky to develop its own unique style. There are fruit and ‘spice-forward’ flavours, such as ginger and pepper – which the team credits to those Bimber whisky casks – and you should also detect a range of other flavours from smoky charred oak to some fresh, tingly herbs. This is a very decent English blend, with more than a little help from the Scots. Traditional in style, their single malts slowly began to catch the attention of whisky fans after the first bottling in late 2009. Since then, St. George’s whiskies have gone from strength to strength. The core expressions – The English Original and The English Smokey – are often joined by experimental small-batch releases using different cask types. The village of Hunmanby, sitting near the coastal town of Filey, is home to Yorkshire’s first-ever single malt whisky distillery. Growing out of a nearby brewery, the distillery is operated using only barley grown on the co-founders’ farm. They have filled over 2,000 casks since production began in mid-2016. The whisky has a familiar pepper spice aroma and a taste of sourdough bread, butter, and herbal notes. 8.
