About this deal

Smooth the mixture into the tin on top of the biscuit base and put it in the fridge overnight to set. The next day, remove it from the tin and drizzle over caramel sauce and melted Galaxy chocolate. To decorate, pipe some whipped cream around the edges of the cheesecake and add Galaxy Caramel pieces, Galaxy Caramel buttons and some fudge sprinkles. How do you make sure the cheesecake sets? Before I list everything you can have, as there are lots of gluten free chocolatey goodies out there, here's a note about some products that aren't gluten free that I always get asked about. And I mean I get asked A LOT about them, if I think of any others I will also tag them on -

For the full recipe with measurements, head to the recipe card at the end of this post. How do you cut up millionaire's shortbread? I use granulated sugar for the caramel layer, but caster sugar (also known as superfine sugar) works well too. For teaspoon (tsp) and tablespoon (tbsp) measurements, please use measuring spoons* and not the type of spoons you eat with. Again this will ensure accuracy and provide the best results. Unfortunately none of the Terrys Chocolate Oranges are gluten free, the exploding bog version used to be but doesn't seem to be available any more.I realise that you can just use the no-bake salted caramel cheesecakerecipe to make your own individual ones, but when I make these individual ones I do make them slightly differently to the full size type. Caramel Tesco have a fair few gluten free options when it comes to their home brands unlike some of the others.

I used unsalted butter for both the shortbread and caramel layers. You can use salted butter if you like, it won't make it taste salty, instead it will balance out the sweetness. However, I do prefer to use unsalted butter and add my own salt as then I can control the salt levels. You can also use a baking spread, but butter tastes much better in my opinion. It's not that baking spread tastes bad, just that real butter is richer and creamier. I haven't included Aldi and Lidl as I need to go in store to see what they have, will update with them when I remember* Make the caramel by melting together butter, sugar and condensed milk. Once it is melted, turn up the heat and let it bubble whilst stirring constantly for 6 minutes on a gas hob (or simmer for 10-12 minutes on an induction hob) .Pour the caramel on top of the biscuit base and put it in the fridge to cool and set. Next, pour melted Galaxy chocolate over the top and decorate with the Galaxy chocolates. Waitrose probably have the best variety of gluten free chocolate bars out of all the supermarkets. However, a lot of the sweets, despite technically being gluten free contain "Wheat glucose syrup", this is gluten free and safe for Coeliacs but I have marked the products with a * that have it incase you avoid wheat due to allergies rather than Coeliac.I used the Galaxy Caramel Buttons to decorate the top purely because I saw them in the shop and they looked yummy, but if you can't find them then use pieces of Galaxy Caramel chocolate bar instead. Ferrero Rocher - Unfortunately not gluten free but take a look below for the bars and Schar do Tempties which are similar. Many Kinder products are safe, the obvious ones that aren't gluten free are the Bueno bars and Happy Hippos as they both contain wafers. To make the base, use a food processor to whizz up the biscuits into crumbs. Mix in melted butter and press the mixture into the bottom of a 23cm springform tin. Put it in the fridge for 30 minutes to set. You can use either butter or baking spread for the biscuit base, I find that baking spread makes the cheesecake easier to remove from the tin as it doesn't make the base set as solidly.
