We asked a panel of 64 consumers to blind-taste Innocent and Tropicana smooth orange juice alongside 10 cheaper own-label juices from supermarkets including Aldi and Asda and Tesco. I can recount several hot days when I had to down a couple glasses of cold orange juice; it’s always such a refreshing feeling. Orange juice, whether store-bought or freshly squeezed, is always delicious.

Aside from the unpleasant taste and odor, it is very unsafe to consume orange juice that’s gone bad. It is not possible to correlate directly the relative concentration of an aroma compound with its importance for flavour. For example, a compound that is 90% w/w of the aroma fraction may contribute very little to the flavour, whereas a compound that has only a 0.001% w/w share of the aroma fraction may have a very high impact on the flavour sensation. The reason is that the human nose and taste buds can respond very differently to compounds of different chemical structure. A big-brand orange juice came top in our taste test, but several cheaper supermarket rivals aren't far behind and cost much less.
