Citrus fruits are available in abundance all over Spain and as a result, many offerings focus on showcasing the nuances in aroma of varieties local to producer. In additional to citrus, many Spanish Gins make use of local wildflowers and herbs, adding complexity and variety to the Gins distilled in Spain. We like to show off the richness in flavour of the Mallorquin Orange Peel, Lavender and Almond Blossom in our Palma Gin, all grown within 15km of the Distillery. Palma, a spirits brand, began its journey in the industry by creating distinct products that reflect a deep appreciation for organic production and local ingredients. Originating from the island of Mallorca, the brand is well-known for its dedication to producing high-quality, organic spirits, which stem from the region's rich agricultural bounty. With a 2000-year history, Palma hosts the bespoke copper pot distillery where Gin Palma was founded and created. True passion and desire combine to produce a handcrafted spirit, of pure quality, using only local, natural and organic botanicals, ensuring intricate care and attention with every distillation. Byron:In terms of production, the Spanish Gin Industry, has developed significantly in the past 10 years. There has been notable increase in the number of smaller craft producers throughout Spain, challenging the bigger traditional regional distilleries in terms of variety and quality in offerings. As a result, these larger producers have also revived and modernised their range of Gins. Alex:One of the oldest Gin brands comes from Menorca - The Xoriguer Distillery in Mahon was established in 1794 and is still distilling the same recipe today. And through its colonies, Spain also brought Gin to the Philippines - the country with the highest Gin consumption per person in the world.

After 2 years of research and a few delays along the way, we officially opened Mallorca Distillery in 2018, the first craft distillery to open in Palma de Mallorca. Our goal was to take everything the island had to offer and somehow capture this in the look, feel and taste of our gin. So we started searching for produce and botanicals that grow naturally on the island and worked hard to create a gin recipe, which we feel, represents Mallorca for its delicate flowers, zesty citrus and earthy vegetation. After a year spent developing the recipe for our first product, we officially launched PALMA GIN in September 2018. Definitelya G&T with a quality natural tonic and peel of orange or in a classic Negroni to add the perfect depth of flavour. Byron:Spain has a rich history when it comes to the production of alcoholic beverages, and this is not just limited to wine. Distilling is likely to have been carried out on the Iberian Peninsula since the arrival of the Moors over 1,000 years ago. Although historically, the focus of spirits production in Spain has been in derivatives of wine or grape distillates, such as Brandy and Orujo, local distilling expertise has translated well to the production of Gin. After the taste comes the bottle design, which is inspired by the traditional Mallorcan tiles, known as ‘suelo hidraulico’. This was the key inspiration and starting point in creating the stunning tile design, which took over a year to complete and is printed with organic paint directly onto the bottle using a specialised process, resulting in an eco-friendly and recyclable product.We are looking into making a spirit with the local grape varieties of Mallorca, and we are also looking at creating some Gin & Vodka truffles with a local artisan chocolatier and working on a coffee spirit with a local artisan coffee roasting company. We're also excited to announce that all our products are now certified Organic, so we are officially with first Organic certified distillery in Mallorca. This Oak Aged Spiced Gin from the Mallorca Distillery’s Palma series was initially a limited release but was so popular they decided to make it a permanent addition! For this expression, the original Palma Gin is aged in Mallorcan oak barrels which previously held local wine, and vanilla, cinnamon and clove are added to the spirit while it rests in said barrels.

We are a small craft distillery (approximately 200 sqm) with a Spanish 500 litre copper pot still located in the industrial heart of Palma de Mallorca. PALMA GIN is distilled using only the highest quality products available. Each botanical has either been hand foraged from the island or is certified organic, giving the spirit it's beautifully smooth finish. Organic Wheat Spirit is first macerated for 18-20 hours with the unique base botanicals; including Mallorcan Juniper, and local fresh citrus peel. The unique core flavour comes from the Mallorcan juniper berries capturing the subtle essence of the Mediterranean Sea. Almond flowers, foraged once a year before spring, combined with orange leaves and lavender, create a delicate floral scent and sweetness. These core ingredients really enhance the depth of flavours from the other botanicals we use. Both originally from Newcastle, we have had quite the journey so far, from working on luxury super yachts around the world, to opening and selling an award winning bar-restaurant in the centre of Edinburgh. We have now focused our attention on recently opening Palma’s first craft distillery creating premium products made from the island, for the island.Palma takes inspiration from the traditional and historical aspects of spirit production while incorporating modern techniques and standards to ensure a premium and consistent quality across their product line. The team carefully selects, processes, and distils the ingredients, diligently overseeing each step of the production process. We offer distillery tours which last approximately one hour, giving you an insight into the exciting world of gin, its history and how we make our products for €15pp including G&T and tastings. Or you can take part in a 'Make Your Own Gin' Experience, lasting approximately 3 hours, this includes a tasting of over 30 different botanical distillates, numerous G&T’s and you get to take home your very own bottle of your blended recipe along with a bottle of any of Mallorca Distillery’s products for €120pp. The use of locally sourced ingredients is paramount for Palma, ensuring that each bottle contains a genuine taste of the island and its unique character. This principle not only solidifies the brand’s tie to its locality but also promotes sustainable practices by utilising readily available resources and minimising transportation.
