About this deal

Place in the oven, the baking sheet on top of the hot, upturned one, and bake for 40 minutes till golden brown. To be honest, I don’t bother, simply because dried fruits are not as dry today as they once were, being generally juicier and softer than in years gone by. Don’t forget to push the mixture down the sides of the bowl from time to time with a rubber spatula. Christmas Chronicles is published in Britain by Fourth Estate (2017),as Culinaire WinterdagboekbyFontaine Uitgers (2018); byDumont (Germany, 2018) as Das Winter Tage Buch and by (Moscow,2018).

A Cook‘s Chronicles: A Podcast Nigel Slater - Apple Podcasts

It's a winter book but I began it when New Zealand was experiencing some very hot weather, and though this made the recipes themselves unsuitable, the words and images offered a lovely respite from the heat. I kind of think that in a way that that was partly what attracted me to working in the food service industry, was that I finally had a family. It is as if my entire childhood was lived out in the cold months, a decade spent togged up in duffel coats and mittens, wellingtons and woolly hats. Covering everything we need to make the winter months bearable, Nigel has taken a classic approach to Christmas, and what could be more classic than a Christmas Cake?It is a freckling of snow on cobbled pavements and the golden light from a window on a dark evening that glows like a Russian icon on a museum wall. Even better, perhaps, is to serve a thick, strained yogurt with them and a scattering of toasted, flaked almonds. The hot, translucent pears and the glossy apple and marmalade sauce are wonderful with vanilla ice cream.

Nigel Slater: ‘I love the crackle of winter’ - The Guardian

Leave to settle for 5 minutes before sliding off the baking sheet onto a serving board or dish, and slicing. And to follow, a bowl of ice cream and searingly hot marmalade pears, whose glowing bittersweet sauce tastes like cinder toffee. It was a week before I got back into town, and I'm barely exaggerating when I say I spent that entire week thinking about this book.

I think the really interesting bits of my story was growing up with this terribly dominating dad and a mum who I loved to bits but obviously I lost very early on; and then having to fight with the woman who replaced her .

National treasure Nigel Slater has been writing for Sainsbury's magazine since its very first issue more than 20 years ago, and he always delights with his no-fuss, flavourful recipes. My first suggestion is to serve them, whole and fat with alcohol, in a beautiful glass with a jug of cream at their side. There aremidwinter cakes and baking, mincemeat and puddings, vegetarian suppers, the Christmas roasts, crisp winter salads, main course soups, pickles, chutneyand marmalades. We’ll take a tour of Nuremberg and the Christkindlesmarkt, and I’ll talk you through my recipes for a sound malt loaf and some orange and poppy seed stollen. In our first episode, we’ll explore the wonderful crackle of winter – a fire in the hearth and boots crunching on frozen grass; as well as the softness – voluminous jumpers and the delicate steam from a deep bowl of soup. Covered with bacon and smeared with dripping, they will roast to rose-tinted perfection in 25 minutes at 230C/gas mark 9.
