So if I do everything I can to make it reach its full potential - use more paste, add more seasonings - can the worst come close to our best curry paste? I chose only brands that have been around for a long time and have a good reputation; so they’re all coming in with a certain amount of cred. Commonly found throughout Southeast Asia, galangal is used in several other Thai dishes such as tom kha kai and tom yum kung.

Mae Ploy Thai Green Curry Paste is ideal for using as a starting point for Green Curry Chicken (Geng Kiao-Wan, Gai) a favourite across all regions of Thailand. Known also as “Nam Prik Gaeng Khiaw Waan” or “Kaeng Khiao Wan,” Green Curry Paste is made from a special blend of fresh green chilis, lemongrass, garlic, salt, shrimp paste, kaffir lime peel, and spices. Start by frying 50g of the paste with oil, then pour in a cup of coconut milk to form the base of your sauce. Used in traditional Thai dishes such as red curry stir-fry over rice, Thai sausage, and fish cakes, this product is important for several recipes. I mean, I don't like the extra plastic being used from an environmental standpoint, but from a freshness standpoint, I like that it's double protected and kept fresh.Aroy-D - another brand that I use quite often cuz it’s widely available; and if Mae Ploy isn't available this is the one I get. To calculate the overall star rating and percentage breakdown by star, we don’t use a simple average. If you want it to absolutely blow your head off, use two and if you are completely insane, use three! If you're sensitive to salt and can handle just a little spice, this is what I would use so that you have room to add more paste without fearing that it would become too salty or spicy.
