About this deal

This homemade anellini pasta rings recipe comes from Abruzzo in Central Italy. It’s a dish you can find in many trattorias and homes there, particularly in and around the town of Elice in the province of Pescara. This pasta recipe is rich in veggies and perfect for vegetarians. Of course, you can use other types of pasta with the alla Pecorara sauce. A unique pasta dish from Abruzzo. Do not skimp on olive oil! Eggplants are like sponges and soak up lots of oil. Make sure the eggplant slices are not dry and brush with extra oil as needed.

This is a simpler version but really you can make your timballo based on what you have. If you don't have anelli pasta you can use other pastas - I've also seen this done with spaghetti too. It looks fantastic with rigatoni pasta and you can also use rice instead of pasta. It's the ultimate leftover meal. You don't need a bundt tin for this as you can also use a springform tin or loaf tin and layer all of the ingredients. You can use eggs or cheese to bind it (in my case I used cheese because I love cheese). Some put breadcrumbs and cheese on the outside (which is something I'm more likely to do next time over a dough). I can only imagine the crunchy delicious crust on the outside.Well those are anelli! I recently read that not only are SpaghettiOs still being produced, but they sell over 150 million cans a year! When Campbells first launched them on the market they used the advertising tag line"The neat round spaghetti you can eat with a spoon" I just love that! Round spaghetti! Pour half the pasta with sauce into the eggplant covered spring form pan. Cover with hard boiled egg slices. Add the remaining pasta and top with the reserved sauce. Press down lightly on the pasta. Sprinkle 2 tbsp. Parmigiano cheese on top. In the world of Italian pasta, there are some traditional types of homemade pasta which are mostly only made and served with one type of sauce. A few that come to mind are silk handkerchief pasta with pesto, pansotti with walnut sauce, fregnacce Abruzzese and stuffed mezze maniche in broth (see links below).

Today, anelli can be found not only throughout Italy but also all over the world. It is especially popular in Puglia and Sicily, where its use isn’t limited to being served as pasta in a can. I like to spread the cooked anelletti onto a rimmed baking sheet so it can cool down faster, then it’s basically like making a lasagne, just have all your ingredients ready to go so you can start layering it into your baking dish.

In Italian, the word anello means ring. Hence, anellini are pasta rings. However, in most recipes for anelli, anelletti or anellini the pasta is dried rings of various sizes. This is the pasta that people outside of Italy associate with Campbell’s spaghetti Os or Heinz spaghetti hoops! It’s considered a traditional pasta variety in Sicily, where they use it in a baked pasta dish called anelletti al forno or timballo di anelletti. Italians also use pasta rings in soups and salads. Step 1 Make the anellini pasta rings Also known as anelli or anellini, meaning small rings, this ring shaped pasta of Sicilian origin is popular for making this baked pasta dish.

This eye catching dish is a specialty from Palermo, Sicily. Some refer to it as a timballo or timpano, which is a baked pasta dish encased in dough or in this case, eggplant.Anelli pasta is used in the production of Campbell's Franco-American SpaghettiOs. [ citation needed] See also [ edit ]

I made the dough in the same way as other pasta doughs by mixing the flours then adding the eggs and olive oil and then water as required. Durum wheat semolina has a higher gluten content than soft wheat flour, so pasta dough made with it requires a bit more kneading to get it soft and pliable. Make the rings by wrapping thin 'snakes' of dough around your index finger and sealing the ends together. Anelli has another smaller version, anellini or anelletti. These tiny rings, like the Stelline pasta, are used mostly in pasta soups. Chef Salvatore Fraterrigo – Head Chef and Owner of Norma Gastronomia Siciliana restaurant in New York City – grew up in Trapani but also lived in Palermo. He considers anelletti al forno to be his version of comfort food. “I remember when we went to Mondello, the most famous beach in Palermo, and we’d bring the anelletti al forno with us. The smell of the ragù was all over the beach. It was the perfect dish after a long and tiring day.”When the pasta has about 5 minutes left, steam the broccoli over the pan of pasta. Let the broccoli cook for a few minutes and then drain everything into a large colander. Rinse thoroughly with cold water to cool down the pasta and the broccoli. When I went home to Toronto at the beginning of the summer, I wanted to make a Pasta Recipe with Mascarpone and believe it or not it took me a quite a few stores before I found a container, and the price was outrageous.
