I have been making gooseberry gin for years, let my gooseberries ripen quite a bit –until they are edilble as a treat straight off the bush –but still have a hint of sharpness. Elderflower is synonymous with a sunny British picnic, so why not elevate it with the addition of Slingsby Gin.
