About this deal

BOTTLE, BAR OR BUST: This is a bottle - and a very good looking bottle at that - I certainly do not mind having on my bar. True it is still a young tasting bourbon but I look forward to letting it air out for a few months. I’m sure it will develop a little more after sitting. It’ll be interesting to see how the Rabbit Hole Bourbon changes as it gets older. I imagine this unique mash bill will get better and better with age as it pulls on more oak and more spice and rustic tones to combat the sweetness. It might not be amazing right now, but I taste a lot of promise in this whiskey down the road. All of Rabbit Hole’s whiskeys are put into toasted and charred barrels at 110 proof. Each batch is 15 barrels or fewer, and non-chill filtered. OK, so, I’m actually interested now. There’s a guy – Mr. Zamanian – who decided to take a differentiated approach to whiskey by fooling around with mash bills. This clears the very low bar set by the NDPs and the less competent craft concerns of the world, in that it indicates a deliberate approach that might even produce something different and better than what can be affordably procured elsewhere. This is the sine qua non of craft whiskey, and I’m approaching these with an open mind as a result.

Malting grains produce enzymes (α-amylase, β-amylase) necessary to convert the starch in the grain to sugars. These sugars are then fermented into alcohol. The starches will convert the grains into the fermentable sugars: trisaccharide maltotriose, disaccharide maltose, monosaccharide glucose, and higher-developed sugars called maltodextrins. How to drink Rabbit Hole Bourbon? Both bourbon and beer share malting techniques. There are more beer types than necessary to list here, from lagers and stouts to IPA’s. It is fortunate that certain distilleries are experimenting with various malting techniques to stand out from the over-saturated “basic” bourbon market today. These sugars aren't created by malting but are part of the grain itself. These sugars are fermentable and can add a nice twist and complexity to the finished whiskey. Malting, in terms of " triple malt bourbon" is the method of germinating or sprouting grain to a certain level and then stopping the germination process before adding it to the mash bill. The germination process is performed under strict tolerances with meticulous methods to ensure it is stopped at precisely the same point each time. After the grain has reached the correct sprouting point, it is dried carefully with great attention to detail. It must be precisely done because any deviation can impact the flavor profile. Don’t get me wrong; it’s not bad. I’d characterize it as pleasant and gentle, which is what some people are looking for in a bourbon. For someone who loves traditional bourbon, though, this is a little too fancy-pants. In the mouth: An initial reprise of the nose’s fruity richness is a good start. This transforms into a nutty note that, combined with a slightly bitter edge, gives the impression of almonds as this moves toward the middle of the mouth. There, the fruity notes return in a less ripe, more acidic form, paired with a surprising note of cigarette ash. This momentarily evolves the round and unctuous mouthfeel of Sauternes, before taking mineralic turn into and through the finish, where the bourbon’s flavors recede in favor of a drying stoniness married to a tannic astringency. Conclusions: If we decide not to exercise or enforce any right or provision of these Terms, such decision shall not constitute a waiver of such right or provision.

Tasting Notes

In 2019, French beverage company Pernod Ricard acquired a majority stake in Rabbit Hole. They intended to use Pernod Ricard’s distribution network for their products but wanted to maintain Rabbit Hole’s distillery’s downtown Louisville location. Hell no! What are you, stupid? Everything there is to be said about bourbon and rye has been said, re-said (sometimes by the same person), paraphrased, plagiarized, meme-ified, and otherwise beaten savagely like the proverbial dead horse. We’re not only at peak whiskey, but we’re at peak whiskey commentary.
